Tropical Greek Yogurt Parfaits

I’m SO excited to share these beautiful fresh summery parfaits with you. It’s basically some of my favorite things in life in a pretty little cup. And with all of this dreary weather we’ve been having, they’ll be sure to brighten your day up! Trust me.

They’re so customizable too..I didn’t add granola to these, which I almost always add to my yogurt. But it would be fab in this. Especially if it was toasted coconut granola.

In an effort to cut down on the sugar, I mixed plain 0% Greek yogurt with a little coconut Greek yogurt for flavor, and added a little lime zest. SO freaking good. I don’t know why I didn’t think of adding zest to my yogurt before. I have found that these are best eaten the day they’re made. There’s something weird that happens with citrus and Greek yogurt if it sits for too long and it can get a little bitter. But you won’t have any problem finishing these off the day of. If you wanted, you could prep the berries in advance, and then layer it with the yogurt right before serving.

Then I chopped up all my favorite tropical fruits and put them in a little marinade of fresh navel orange juice.

And toasted coconut. I could put this on everything. Always need the crunch factor too!

Tropical Greek Yogurt Parfaits

Course Breakfast, Snack
Prep Time 30 minutes
Total Time 30 minutes
Servings 3 large or 4 smaller parfaits

Ingredients

  • 2 c. 0% plain Greek yogurt (you could also use 2% for an even creamier result!)
  • 1 c. coconut flavored Greek yogurt
  • zest from 1/2 small lime
  • 2 kiwis, diced, plus extra sliced for topping (if desired)
  • pulp from 1 passionfruit
  • 1/2 c. chopped pineapple
  • 3/4 c. chopped strawberries
  • 1 medium mango, diced, plus extra sliced for topping (if desired)
  • juice from 1/2 navel orange
  • honey for drizzling
  • chia and/or hemp seeds for topping
  • toasted coconut flakes (I toast mine in a dry skillet over medium heat until golden)
  • granola if desired!

Instructions

  1. Combine plain Greek yogurt and coconut yogurt in a medium bowl. Stir in lime zest until incorporated. Set aside. Combine all chopped fruit and passionfruit pulp in a medium bowl. Add orange juice and stir to combine. Set aside.

  2. To assemble parfaits, spoon several tablespoons yogurt mixture in the bottom of bowls or cups, and then add a couple spoonfuls of fruit mixture. Top with a sprinkling of toasted coconut and granola if using. Repeat layers until you run out of yogurt and/or fruit. (I had a little fruit leftover).

  3. Top with extra fruit, and sprinkling of chia and hemp seeds, and a drizzle of honey. Serve immediately!
