If you’ve never tried chia fresca, it’s basically a natural energy drink made from water, chia seeds, and whatever flavorings you like! I made this hibiscus version because I’ve been loving using hibiscus in drinks this summer! It gives such a nice light floral taste and the color is obviously to die for.
The chia seeds soak up the water and kind of plump up and “thicken” the water. I LOVE the texture. If you’ve tried chia pudding, it’s kind of like that, but thinner!
If you’re constantly drinking water like me, this is such a nice way to switch it up and get some extra health benefits in. Chia seeds are filled with omega 3’s and they’ve also been known to boost energy levels. Helllllo 3 o’clock slump. This drink is PERFECT for those times.
I sweetened this with honey and added some lime wedges to it for serving! So refreshing for these hot summer days too. I wouldn’t judge if you spiked it either. Or, you could just go for it and make these hibiscus strawberry margaritas!
I buy my dried hibiscus flowers here, but some specialty grocery stores carry them too.
And I forgot to mention. If you love texture, you will LOVE chia fresca. It’s so fun to drink! If you’ve had the kombucha with chia in it, this is very similar to that. So so good!
- 4 cups water
- 3 tablespoons honey
- ¼ cup dried hibiscus flowers
- 5 tablespoons chia seeds
- lime wedges for serving
- Bring water to a boil. Add honey and dried hibiscus flowers and stir. Remove from heat and let the flowers steep in the water until it has cooled completely.
- Once cooled, strain mixture through a fine mesh strainer into a pitcher or jar. Discard the dried flowers. Add the chia seeds and stir or shake to combine. Let sit on the counter for 30 minutes, shaking or stirring every 5 minutes.
- Refrigerate until cold, and serve with lime wedges! (I like to keep shaking mine during the refrigeration process so that the chia doesn't stick together too much, but it isn't necessary!)
