BLT Chicken Salad Lettuce Wraps

These BLT Chicken Salad Lettuce Wraps are a lighter way to enjoy all the flavors of a BLT, in chicken salad form! Super easy to make and they use Greek yogurt instead of mayo! The chicken salad keeps for a few days in the fridge, so it works great for meal prep too!

One of my absolute favorite things to make for lunch and/or meal prep for the week is lightened-up chicken salad that’s made with Greek yogurt. To be honest, I’m not a huge fan of mayo (I know I’m crazy) and I really enjoy the tanginess from Greek yogurt. Here, you really can’t tell a difference. I actually prefer it. With the salty, crispy bacon mixed in, it totally feels like an indulgence. Forever one of my favorite ingredient swaps!

I play around with different variations of chicken salad, but this one was inspired by one of my favorite things: BLT’s. In the past, I’ve made BLT Grilled Cheeses, and BLT Salmon Burgers. Both SO good. And both are on my site (but totally awful photos, so feel free to search from them if you’re interested 😂).

But yes. The BLT combo. I can’t help it. It’s just so good! Salty bacon, beautiful juicy tomatoes, crisp lettuce, toasty bread, and usually avocado..because I’m clearly in love with it, if you haven’t noticed.

I thought it was time for another version of one of my favorite sandwiches, and this is it! You could certainly eat this on toasted bread, but I love it in the lettuce cups.

In the summer, I usually reach for the butter lettuce more often than I make toast or a sandwich, because it’s unbelievably beautiful and so refreshing.

I mean, why wouldn’t you want to eat chicken salad stuffed into those beautiful leaves?! Especially chicken salad that’s studded with bacon. I mean come on.

Also. How gorgeous are these heirlooms? I got so excited a couple weeks ago when I first started seeing them make their appearance at the grocery store. I can’t wait to make ALL the caprese salad with them this summer. 😍

So this chicken salad. It’s literally less than 10 ingredients for the whole recipe, and the chicken salad is just Greek yogurt, dijon, apple cider vinegar, a squeeze of lemon, garlic powder, salt, pepper, bacon, and chives. That’s it! And the flavor is un. real.

Basically, these come together super quickly. Especially if you buy a rotisserie chicken from the store and shred it. That way, there’s no cooking necessary. I cooked up some chicken breasts I had on hand and shredded them, but do what you gotta do!

Also, the Greek yogurt totally cancels out the bacon. It’s just math.

This chicken salad will stay for a few days in the fridge, but it’s definitely the best on the first day, because the bacon stays crispy. If you want to make it ahead, I’d wait to add the bacon until the last minute.

Or, if you want to meal prep it for the week, just make the chicken salad minus the bacon, and keep everything separate, then mix it together once you’re ready to eat!

Because crispy bacon is the best. Can we all agree?

BLT Chicken Salad Lettuce Wraps

Ingredients

  • 1/2 cup plain Greek yogurt (I used 0%, but use whatever you like)*
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon garlic powder
  • 1 teaspoon apple cider vinegar
  • juice of 1/2 a lemon
  • 1/4 teaspoon salt
  • freshly cracked black pepper
  • 2 1/2 cups cooked shredded chicken*
  • 4 slices bacon, cooked and crumbled, plus extra for garnish
  • 1 tablespoon chopped fresh chives, plus extra for garnish
  • 2-3 heirloom tomatoes, sliced
  • butter lettuce/lettuce of your choice for serving

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, dijon, garlic powder, apple cider vinegar, lemon juice, salt, and pepper until combined. Add in the shredded chicken, chopped bacon, and chives and stir together until evenly coated.
  2. Serve in lettuce cups with sliced heirloom tomatoes and sprinkle with extra bacon and chives!

Recipe Notes

*For an even richer, creamier result, you can sub 2% or full-fat Greek yogurt, but I really love the 0%! 

*To save time, you can totally use a store-bought rotisserie chicken and shred it up! I definitely do that more often than not. Otherwise, I'll either poach or bake chicken breasts myself, and shred them!

*If you're making this ahead of time and want your bacon to stay crispy, I'd keep the bacon separate from the chicken salad until right before serving. That being said, I've made this for meal prep and eaten it up to 4 days or so after I made it, and the fact that the bacon lost its crispiness didn't bother me at all. Totally personal preference, but it's best on day 1!

    Do you know what the nutrition breakdown of this is? Like calories, grams of fat, etc?

      Hi Ally! I don’t, I’m sorry! There are a bunch of free nutrition calculators online that you can plug ingredients into though!
