Almond Date Power Bites

These little balls of health are perfect for an on-the-go breakfast with a smoothie. They are also a great pre or post workout snack. They are delicious and filled with everything good for you. Oats, almond butter, hemp seeds, and chia seeds. Tons of omega-3’s, protein, and antioxidants. They are naturally sweetened with dates and are vegan as well. They can easily be made gluten free by using GF certified oats. Make these on Saturday or Sunday to have on hand during the week!

These will keep for at least a week in the fridge.

Makes about 45 3/4” bites.

1 1/4 c. pitted Medjool dates, packed
3/4 c. old fashioned oats (Use certified GF oats if gluten free)
1/4 c. almond meal
2/3 c. creamy almond butter
2 T. hemp seeds
1 T. chia seeds
1/4 c. unsweetened coconut flakes
1 tsp. cinnamon
pinch of sea salt

Add all ingredients to a food processor and pulse 20-30 times, then let the machine run for 30 seconds to a minute or until ingredients come together. Form into 3/4-1” balls, pressing the mixture between your fingers to form together. Store in an airtight container for up to a week!
