Can you tell I’m on an avocado kick? Well, I pretty much always am. They are always in my house. I use them for everything. Smash them on toast, make my favorite avocado egg toast, smash them on sandwiches rather than using mayo, add it to salads, salsas, and make guac of course. My favorite. I’m pretty sure I could’ve eaten this entire batch, but I exercised as much self control I have, and brought it to friends at work. It was devoured.
Adding bacon to guac is probably the best idea I’ve ever had..it adds this delicious salty bite. And the queso fresco…my favorite Mexican crumbly cheese..is SO good in this. Now this recipe is not really January diet food, but who cares. Make it for Superbowl Sunday and you’ll thank me.
Serves 4-6
5 slices thick cut bacon, cooked and crumbled + more for topping (1-2 slices), if desired
4 avocados
juice of 2 limes
1/4 c. chopped red onion
2 cloves garlic, minced
2 T. chopped cilantro
1/4 tsp. cumin
1/4 tsp. chili powder
pinch of red pepper flakes
salt and pepper
1/4-1/2 c. crumbled queso fresco, for topping
Combine all ingredients in a large bowl except for the queso fresco and smash together with a fork or potato masher until combined. Season to taste with salt and pepper. Transfer to a bowl and top with crumbled queso fresco and more crumbled bacon if desired. Serve with tortilla chips or your dipper of choice.
