So many breakfast ideas lately. Sorry I can’t resist! I promise I’ll have something different on the site soon. I’ve just been in a breakfasty mood lately and these are SO good. You can make them in 15 minutes or less and they are healthy and delicious. Heck, you can eat them for any meal. I’d eat these any day and any time.
I can’t say enough good things about these tacos. They are perfect for when you’re in a breakfast rut and want something satisfying but healthy. I always add more egg whites to my eggs for an extra boost of protein and staying power. Especially after workouts.
Serves 2
2 eggs+ 2 egg whites, beaten
1 c. chopped kale
1/2 c. canned black beans, drained and rinsed
1/2 of a jalapeño pepper, seeds and ribs removed, finely chopped
1 clove garlic, finely chopped
1/4 tsp. cumin
1/4 tsp. chili powder
salt and pepper
lime for squeezing
hot sauce for serving
tortillas (I use these amazing sprouted grain tortillas from Whole Foods that are so chewy and delicious)
Heat a nonstick skillet to medium/high heat. Add a drizzle of olive oil. Sauté jalapeño and garlic for about a minute until fragrant, and then add kale and black beans. Cook for an additional 1-2 minutes, until kale has wilted a bit. Next, and add cumin, chili powder, and a pinch of salt and pepper, to taste. Next, add egg, and cook mixture until eggs are scrambled and cooked through, about a minute.
Heat tortillas on grill or in microwave and fill with egg mixture. Finish with a squeeze of lime and hot sauce if desired. Avocado would be great on these too!
