I can’t get enough of this stuff. Definitely one of my favorite breakfast/snacks/brunches of all time. I am always making new versions to try, and this was one of my faves. My mom found some gorgeous swiss chard at the store, and I decided to sauté it for these toasts. This is a super healthy and easy breakfast and a chance for you to get some greens in before noon. Never a bad idea…especially this month when everyone is on a health kick and detoxing from all the holiday treats. I know I am.
To make these toasts, sauté some swiss chard in a little olive oil until wilted, just a few minutes. Season to taste with salt and pepper. I added a little chopped fresh basil to it also, but you can add whatever herbs you have on hand.
Next, toast some bread, (I used Whole Food’s Flax and Quinoa bread), and mash an avocado/ half and avocado on it, depending on how many toasts you are making. Top with sauteéd swiss chard, a little more salt and pepper, and next cook an egg to your liking. I use those cute little egg pans like this and I usually do 1 egg + 1 egg white for extra protein.
Finally top with egg and enjoy. Perfect healthy breakfast to add to the rotation. Can’t get enough of those runny yolks.
