Blackberry Cucumber Gin Spritzers + a video!

Blackberry Cucumber Gin Spritzers
These cocktails have me dreaming of summer. They’re the most perfect, refreshing drink that’s not too sweet. Just the perfect amount of sweetness. It’s totally one of my pet peeves when it comes to fruity drinks. I’m definitely not a sugar-laden cocktail kind of girl. And I did something kinda crazy and added SPIRALIZED cucumbers to these! How fun?! Garnishes are so fun to play with.

Blackberry Cucumber Gin Spritzers

I had originally planned to make these with vodka, but after many taste tests between my mother and I, we decided that the gin added that extra “something”. It pairs so beautifully with the mint, cucumber, and blackberry syrup.

I’m usually not a gin person, but with certain combinations, I love it. I think my lack of interest stems from drinking gin out of waterbottles in college. Yes, I’m serious. Scarred for life.

Blackberry syrup!! How gorgeous is this stuff?! I want to add it to everything including iced coffee, yogurt bowls, toast, and whatever else I can dream up. It adds just a hint of blackberry flavor and sweetness to these and it’s deeeelish.

If you don’t have a spiralizer, feel free to slice the cucumbers! The cucumber noodles are just TOO fun!

Something else that inspired these drinks was my love of cucumber mint water. I love adding sliced cucumbers and fresh mint to water. It makes me feel like I’m at a spa. Is that crazy? It’s the little things that brighten my day.

I also did something fun and made us a video!

Summer is so close I can taste it.

Blackberry Cucumber Gin Spritzers

These blackberry cucumber gin spritzers are such a refreshing drink for summer! The flavors of mint, lime, and blackberries pair beautifully together.

Course Drinks
Prep Time 10 minutes
Servings 1 cocktail, is easily multiplied

Ingredients

For the cocktail

  • a small handful of blackberries + extra for garnish
  • a few mint leaves + extra for garnish
  • 1 1/2 ounces gin
  • 1 1/2 ounces blackberry simple syrup
  • 1 ounce freshly squeezed lime juice
  • a few splashes of lemon lime soda
  • spiralized or sliced cucumbers for garnish
  • lime wedges for garnish
  • crushed ice

For the blackberry simple syrup

  • 1 cup blackberries
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Make the simple syrup. Combine the blackberries, sugar, and water in a medium saucepan and bring to a boil. Boil for 2 minutes and then remove from heat and let cool.

  2. To make the cocktail, add crushed ice to a glass. Add a few blackberries and a few mint leaves and muddle until they have released their juices. To a cocktail shaker, add the gin, simple syrup, and lime juice. Shake for 30 seconds. Pour into the glass and top off with the lemon lime soda (a few good splashes). Garnish with a squeeze of lime, spiralized cucumbers, blackberries, and mint leaves. Drink up!

Recipe Notes

*Makes a lot of simple syrup! Keeps well in the fridge for up to two weeks!
