BLT Grilled Cheese

BLT’s: One of my favorite sandwiches. Grilled Cheeses: Can’t go wrong ever. So why not combine them? I think it’s pretty self explanatory. Cheese, bacon, heirloom tomatoes, crusty grainy bread….I wanna eat this every day.

Makes 2 sandwiches

4-6 slices bacon, cooked
2-4 slices heirloom tomato
4-5 oz. mild cheddar cheese, thinly sliced
4 slices whole grain crusty sourdough
handful of spring mix
softened butter, for spreading

Begin by spreading outsides of bread with butter. Preheat nonstick skillet to medium/high heat. Lay slices of cheese on insides of all 4 slices of bread. Top 2 of the slices with bacon, heirloom tomato, and a small handful of spring mix. Top each sandwich with other bread half. Grill for 2-3 minutes per side, until cheese is melty and bubbly and bread is golden and crusty. It may take more or less time, it depends on your stove. Add a little more butter to the pan if needed.
