Burrata Toast with Caramelized Peaches

Burrata Toast with Caramelized Peaches is just about THE most perfect summer bite. Toasted ciabatta, olive oil, creamy burrata cheese, juicy caramelized peaches, balsamic glaze, fresh thyme, orange zest, and flaky sea salt come together to create an incredible summer appetizer, lunch or snack! Heck, even dessert! This one is a must-make if you have fresh peaches on hand!

My love affair with the toast + burrata + peach + balsamic + thyme + orange zest combo started back in 2016 and hasn’t stopped. I’ve also created a pizza with this same combination. Redundant? Maybe. I don’t even care. It’s too uniquely amazing and delicious to explain.

You can’t have burrata toast without really incredible bread.

You can use what you like here. I’ve made this recipe with Italian bread, sourdough, seedy/grainy bread, and ciabatta. I couldn’t pass up this ciabatta at the store because it was so beautiful – all of those crevices really soak up the olive oil, burrata, juicy peaches, and balsamic perfectly though! Highly recommend.

The next most important component of this burrata toast is the caramelized peaches.

Yep, all you need is a few minutes, some thinly sliced peaches, a touch of brown sugar, a pinch of salt, and a little butter or coconut oil.

These would also be insanely delicious over a bowl of vanilla ice cream with a handful of granola. Kind of like a makeshift peach crumble/crisp!

The best way to describe this toast is decadent. Is it dessert? Is it an appetizer? Is it a snack? Is it lunch?

Who knows. It’s all of the above, really. I can’t think of a time where this toast wouldn’t be acceptable to eat. It hits all of the notes you’d ever want in the perfect bite. Sweet, savory, salty, crispy, creamy, crunchy, floral, tangy – I could go on and on.

It’s the perfect “entertaining recipe” because it’s so unique, such a crowd pleaser, and it’s even a good conversation starter. People always want to talk about food!

Here’s a quick rundown of how to make this burrata toast:

  • Caramelize your peaches. Basically, just sauté your thinly sliced peaches in butter or coconut oil with a little brown sugar and a pinch of salt. They will break down and turn into the most delicious, sweet, jammy peaches.
  • Toast the bread you’re using. Here I used ciabatta, but I’ve also made this recipe with several different kinds of bread. Just make sure it’s good quality, crusty, fresh, and can hold up to all of the toppings!
  • Assemble! Drizzle your toasts with olive oil and flaky salt (the foundation for anything good, am I right?!), then top it with creamy burrata cheese, and a mound of caramelized peaches.
  • Finish. Add the last touches – a drizzle of balsamic glaze or aged balsamic vinegar, freshly grated orange zest (TRUST me), fresh thyme leaves, and flaky sea salt.

Dive in. There’s nothing better!

Burrata Toast with Caramelized Peaches

Burrata Toast with Caramelized Peaches is just about THE most perfect summer bite. Ingredients

  • 1 teaspoon unsalted butter or coconut oil
  • 2 ripe peaches, thinly sliced
  • 2 teaspoons light brown sugar
  • pinch of salt
  • 4 1/2 - 3/4'' thick slices of your favorite crusty bread (I used a ciabatta loaf, sliced it lengthwise, then into smaller pieces)
  • extra virigin olive oil, for drizzling
  • 8 ounces burrata cheese
  • balsamic glaze or aged balsamic vinegar, for drizzling*
  • 1-2 teaspoons fresh thyme leaves
  • 1 teaspoon orange zest
  • flaky sea salt, for finishing

Instructions

  1. Begin by making the caramelized peaches. Heat a skillet over medium heat. Add the butter or coconut oil. Once melted, add the peaches, brown sugar, and a pinch of salt. Sauté for 4-5 minutes, stirring frequently, until peaches have begun to break down and become caramelized. Set aside.

  2. Toast your bread. While still warm, drizzle with olive oil and sprinkle with flaky salt.

  3. To assemble, top toasts with burrata and a spoonful of caramelized peaches. Drizzle with balsamic glaze. Finish with orange zest, a sprinkle of fresh thyme, and a healthy pinch of flaky sea salt. Devour!

Recipe Notes

*The best kind of balsamic to use for this recipe is the aged balsamic vinegar that's almost syrupy - it's more mellow and has a more concentrated flavor. You can also make your own balsamic glaze by reducing balsamic vinegar in a saucepan until it thickens and becomes syrupy. I don't love the balsamic glaze that comes in the squeeze bottles, but if you have one you love, feel free to use it!
