Nectarine Heirloom Tomato Summer Salad with Burrata

This Nectarine Heirloom Tomato Summer Salad with Burrata is the perfect combination of the best ingredients summer has to offer. Juicy heirloom tomatoes, fresh nectarines, creamy burrata cheese, avocado, raw corn, basil, chives, and a simple honey champagne vinaigrette!

For the last day of August, I’m cramming in one last super summery meal to round out the season! In the form of the dreamiest summer salad that I want to eat nonstop. With the juiciest heirloom tomatoes, nectarines, avocado, raw corn, and BURRATA, how could you want to eat anything else to ring in the last days of summer?! Also, am I really typing those words right now?!

I’m all about late summer produce. The best of the best tomatoes, corn, nectarines, peaches, and basil. Zucchini is also up there in my faves, and FIGS too. More on that in September.

To top all of this beautiful produce, I went with a super simple champagne vinaigrette with champagne vinegar, garlic, dijon, honey, olive oil, and a little salt and pepper. I loveee this dressing and it’s fantastic with just about anything.

I love making my own dressings and sauces and prepping them on Sundays, and this one is definitely one of my go-to’s!

Can you even deal with how gorgeous all of this produce is? To me, there’s truly nothing better than super fresh ingredients that just WORK together.

The creamy burrata just puts everything over the top – but doesn’t it always?!

The key here is to find super juicy nectarines. If they don’t seem ripe, go with peaches or any other stone fruit that looks fresh and ripe! Even strawberries would be amazing here too!

And we can’t forget about fresh basil and chives. A sprinkle of fresh herbs is the key to anything good if you ask me. You can truly use whatever you have in your garden, but that combo is my favorite with this salad!

A little flaky sea salt on this whole situation is incredible too.

Nectarine Heirloom Tomato Summer Salad with Burrata

This Nectarine Heirloom Tomato Summer Salad with Burrata is the perfect combination of the best ingredients summer has to offer. Juicy heirloom tomatoes, fresh nectarines, creamy burrata cheese, avocado, raw corn, basil, chives, and a simple honey champagne vinaigrette!

Ingredients

For the salad

  • 6 cups greens (I used spring mix and baby romaine)
  • 2 nectarines, sliced
  • 2 heirloom tomatoes, sliced
  • 2 ears corn, cut off the cob
  • 1 avocado, sliced
  • 8 ounces burrata cheese, torn into pieces
  • fresh basil leaves for topping
  • chopped fresh chives for topping

For the champagne vinaigrette

  • 1/3 cup champagne vinegar (can also use white balsamic!)
  • 1 clove garlic
  • 1 teaspoon dijon mustard
  • 2 teaspoons honey
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Arrange greens on a platter and top with sliced nectarines, heirloom tomatoes, the corn, sliced avocado, and torn burrata. Drizzle with desired amount of dressing and sprinkle with fresh basil and chives!

champagne vinaigrette

  1. In a food processor or blender, combine the champagne vinegar, garlic, dijon mustard, honey, olive oil, salt, and pepper. Blend until smooth. Taste to season with salt and pepper.
