Cinnamon Coffee Oat-Coconut No-Bake Energy Bites

IMG_0679These are a perfect pre-workout or post workout snack, or a quick bite for a sweet craving.. and they’re actually healthy!

They are packed with healthy fats, protein, omega-3’s, and tons of flavor. If you didn’t know, I am a huge peanut butter fanatic and I LOVE coconut. And coffee. And basically every ingredient in these bites.

They are great for an on-the-go breakfast too!

Makes about 15-20 bites, depending on the size.

1 c. old fashioned oats (not instant)
1 1/2 T. chia seeds
1/4 c. + 2 T. peanut butter
2 1/2 T. almond butter
1/2 c. unsweetened shredded coconut
2 T. pumpkin seeds
1 T. raw almonds
1 1/2 T. flaxseed meal
1 1/2 T. coffee grounds
1 tsp. cinnamon
pinch of salt
drizzle of honey (about 1-2 tsp.)
1 T. coconut oil

Combine all ingredients in a food processor. Pulse 10-20 times, then run processor for about 30 seconds or so until thoroughly blended. Might be a bit crumbly, and if so, add another tablespoon or two of nut butter. It’s o.k. if mixture is a little crumbly, it will come together as you roll the balls.

Roll into 1” balls, sprinkle with more shredded coconut, and refrigerate for at least an hour or two. Overnight is best.

Keep them in the fridge in an airtight container for convenient snacking, pre-workout, post-workout, or anytime!
