These Creamsicle Prosecco Floats are reminiscent of a childhood favorite treat, and only require 3 ingredients! They are perfect for brunch with friends, dessert on a warm night, or whenever you want to treat yourself!

If you’re a 90s baby like me, or even 80s, you probably remember those creamsicle Flintstone push pops, or the creamsicle popsicles with the ice cream inside and orange outside. I mean, how good were they?! The Flintstone ones were my personal favorite, and I will never ever forget that taste. Sitting outside on the porch in the sweltering heat, the ice cream running down my hands, thinking about how I could convince my mom to give me another one. Isn’t it funny the little things you remember from your childhood?

I was feeling nostalgic and dreaming about Spring and warmer temperatures (this has been the longest winter EVER), so I decided to make springy/summery adult version of one of my favorite childhood treats!

Creamsicle. Prosecco. Floats.

Yep, you heard that right.

Creamsicle Prosecco Floats

First of all, this might be the most embarrassingly easy recipe I’ve ever shared on the blog. Actually, it definitely is. I’m not sure if you can even call it a recipe.

Regardless, they’re insanely delicious and give me so much nostalgia for that taste that I love!

Creamsicle Prosecco Floats

These beauties are just a scoop of vanilla ice cream (or two), a scoop of orange sherbet (or three), and a healthy pour of your favorite prosecco or champagne. I mean, how could you not love them?!

I garnished them with a little mint and an orange twist to make them extra fun, but that’s totally optional.

These would be perfect for brunch this weekend! Or even dessert. Or anytime you want to #treatyoself!

Creamsicle Prosecco Floats

These Creamsicle Prosecco Floats are reminiscent of a childhood favorite treat, and only require 3 ingredients! They are perfect for brunch with friends, dessert on a warm night, or whenever you want to treat yourself!

Prep Time 5 minutes
Servings 1 float, is easy multiplied

Ingredients

  • 1-2 scoops vanilla ice cream
  • 1-2 scoops orange sherbet
  • prosecco or champagne
  • fresh mint and orange curls for garnish*

Instructions

  1. Place the scoops of vanilla ice cream and orange sherbet in a glass. You want something deep because they will foam up quite a bit! Top with desired amount of prosecco and garnish with a sprig of mint and an orange curl. Serve immediately!

Recipe Notes

*To make my orange curls, I use a sharp paring knife to slice some peel off of an orange, and then I thinly slice it into strips. I then form them into curls and press tightly with my fingers so they keep their shape!
