Dark Chocolate Cherry Bourbon Floats

These Dark Chocolate Cherry Bourbon Floats are made with dark chocolate bourbon fudge sauce, vanilla ice cream, cherries cooked down in bourbon, and cola! They’re a perfect decadent treat for a hot day, and don’t forget the whipped cream and extra bourbon fudge sauce!

Get ready for the most decadent treat! I can’t even remember the last time I had a float (it’s been AGES), and I don’t think I’ve ever had one spiked for that matter. As a child from the 90s, there were many floats in my childhood. The most common one I had was regular vanilla ice cream with root beer. Just a classic root beer float! I lovvvved them and can still taste that nostalgic taste to this day. Another thing I loved was cherry coke – which totally inspired these!

They actually do taste like a grown up version of cherry coke, but with other fun things added..like bourbon!

And dark chocolate fudge sauce (OMG), and bourbon cherries, AND whipped cream!

What more could you want in a decadent summer drink?!

I’ve actually always loved the chocolate cherry combo. I think they taste so amazing together and I’m always looking for new ways to use those flavors!

When my friends at Chocolove asked me to create a boozy summery drink, I immediately thought chocolate fudge sauce, ice cream, and CHERRIES! I can’t get enough of them in the summer, and all of the berries and fruit for that matter!

And another thing that tastes amazing with cherries in my opinion is bourbon! Another match made in heaven.

I pitted the cherries, and then cooked them down in bourbon and a little sugar. Can you say boozy cherry jammy syrupy goodness? Omg it’s SO good.

It would be amazing served over ice cream with the dark chocolate fudge sauce too! I even reached for it accidentally one morning when I was looking for the berry chia jam to top my oatmeal with. 😂

Hey, that wouldn’t have been a bad idea though, right?!

OH. And the dark chocolate fudge sauce isn’t just plain dark chocolate fudge sauce. It’s SPIKED with bourbon too! Basically, every component of this glass of goodness is infused with bourbon and it’s just incredible.

Concentrated bourbon flavor in every little sip!

So we’ve got: vanilla ice cream, cherries cooked down in bourbon and sugar, homemade dark chocolate bourbon sauce, coke, whipped cream to top it all off, AND more chocolate sauce and cherries on top! SUCH a treat.

Ugh. That fudge sauce is so dangerous. There are so many things I want to put it on. It would be amazing in fall desserts too. Bourbon always feels so warm and fall-like to me. Love love love it.

Dark Chocolate Cherry Bourbon Floats

These Dark Chocolate Cherry Bourbon Floats are made with dark chocolate bourbon fudge sauce, vanilla ice cream, cherries cooked down in bourbon, and cola! They're a perfect decadent treat for a hot day, and don't forget the whipped cream and extra bourbon fudge sauce!

Prep Time 30 minutes
Servings 1 float, is easily multiplied

Ingredients

For the dark chocolate bourbon fudge sauce

  • 1 cup water
  • 1/3 cup light brown sugar, loosely packed
  • 1/4 cup light corn syrup
  • 2 bars (6.4 ounces total) Chocolove dark chocolate
  • 1/4 cup bourbon
  • 1/4 teaspoon salt

For the bourbon cherries

  • 2 cups dark sweet cherries, halved and pitted
  • 1/4 cup sugar
  • 1/4 cup bourbon

For the floats

  • 3 scoops vanilla ice cream
  • 1 ounce bourbon
  • a few spoonfuls of the bourbon cherries
  • a couple spoonfuls of the fudge sauce, plus extra for serving
  • your favorite cola
  • whipped cream for topping
  • chopped Chocolove dark chocolate for topping (optional)
  • fresh cherries for garnish (optional)

Instructions

  1. Begin by making the bourbon fudge sauce. In a medium saucepan, bring the water, sugar, and corn syrup to a boil. Once boiling, reduce heat and simmer until the mixture begins to thicken, about 10-12 minutes. Add the chocolate, bourbon, and salt and stir constantly until melted. Let simmer for 2-3 minutes, stirring constantly. Remove from heat and let cool.

  2. Make the bourbon cherries. In a medium saucepan, combine the cherries, sugar, and bourbon, and heat over medium-high heat. Simmer mixture for 10 minutes or so, or until cherries break down and become syrupy. Set aside to cool.

  3. Once bourbon fudge sauce and cherries have cooled, make the floats. Add ice cream to a tall glass and add the bourbon. Add a few spoonfuls of the bourbon cherries, and a couple spoonfuls of the bourbon fudge sauce. Top with desired amount of cola, and top with whipped cream. Drizzle with extra fudge sauce, bourbon cherries, and chopped dark chocolate if desired. Garnish with a fresh cherry and enjoy immediately!

Recipe Notes

*Extra dark chocolate bourbon fudge sauce will keep in the fridge for up to 2 weeks! It's delicious on ice cream and in drinks! You can reheat it over the stove or in the microwave, being careful not to overheat it or it will seize up.
*Extra bourbon cherries will keep in the fridge for up to 1 week, and are fabulous on ice cream as well, in cocktails, or dare I say - on top of your morning oatmeal!
