These burgers are seriously one of my favorite things I’ve had in awhile. I know I say that a lot, but these are SO good and the corn cotija salsa MAKES it. I can’t get enough corn in the summer, especially when it’s grilled. This is almost like Mexican street corn, but in salsa form…so if that doesn’t convince you to make these, I don’t know what will. Also the burgers are super healthy! I used 99% lean ground turkey, and whole wheat buns, and just a little crumbled cheese in the salsa for salty creaminess. I could eat these every darn day.
In case you’re wondering, margaritas would go perfectly with these.
You should totally make these for Memorial day weekend. They are such a crowd pleaser, and they’re a healthier, more exciting version of your regular old cheeseburger (not that there’s anything wrong with regular burgers at all).?
That avo though.
Jalapeño Turkey Burgers with Grilled Corn Cotija Salsa and Avocado
Ingredients
- 1 lb. ground turkey breast (I used 99% lean)
- 1/2 medium yellow onion, diced
- 1 jalapeño, seeds and ribs removed, finely chopped
- 2 tsp. cumin
- 1 1/2 t. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 ears corn
- 1 T. olive oil
- 1/2 c. diced red onion
- 1/3 c. chopped cilantro
- juice of 2 limes
- 1/2 c. crumbled cotija cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
- whole wheat buns, toasted if desired
- bibb lettuce for topping
- avocado for topping
Instructions
- To a medium bowl, add ground turkey, yellow onion, jalapeño, cumin, chili powder, garlic powder, salt, and pepper. Mix with your hands to combine and form into four equal sized patties.
Rub the corn with olive oil and season with a little salt and pepper. Set aside.
- Preheat grill or grill pan to medium high heat, and grill the burgers about 4-5 minutes per side until cooked through. While grilling the burgers I grilled the corn as well, turning them every minute or so, to get an even char.
To make salsa, cut the corn off the cob and add to a medium bowl. Stir in red onion, cilantro, lime juice, cotija cheese, salt, and pepper. Season to taste and add a little more lime if desired. Add burgers to buns and top with lettuce, avocado, and corn salsa. Serve!
This salsa is also delicious by itself as a side dish, or eaten with chips (my ultimate #1 weakness)!
Jennifer
My husband came across this recipe and we decided to give it a try. It was totally amazing!! I love Cotija and could not get enough of the salsa on my burger! This will definitely be in our summer rotation!
