It’s finally feeling a lot like summer and I couldn’t be more happy about it. I’m such a warm weather girl through and through. This also means time for more smoothies! Especially smoothies in bowl form like this one. Because TOPPINGS.
If you follow me on Instagram, you know I’ve been on a smoothie bowl kick. What’s more fun than piling a thick smoothie (that tastes like ice cream and/or sorbet), with a TON of toppings?! Fresh fruit, chia seeds, nut butter, granola, honey, coconut..the list goes on.
It goes back to the texture thing I talk about every two seconds on this blog. Are you tired of hearing about it yet? I can’t help it. I just LOVE having different textures and crunch in all meals. Reason # 1 why I prefer smoothie BOWLS over smoothies. So. much. better.
For this smoothie bowl, I used a mixture of frozen mango chunks, frozen banana, frozen pineapple chunks, freshly grated ginger (such a game changer!), and a coconut milk/almond milk blend! It seriously tastes so summery and tropical. This mixture would even be delicious spiked! Not for breakfast though…prrrrobably not the best idea.
Don’t EVEN get me started on the toppings. Kiwi slices, fresh mango, blueberries, raspberries, banana, chia seeds, chocolatey granola, and shredded coconut. So so good! Feel free to use whatever toppings you like. Go crazy!
If you’ve never made a smoothie bowl before, the key is to use as little liquid as possible. And frozen banana makes it SO creamy. Depending on your blender and how frozen your fruit is, you should only have to add 1/2-3/4 cup of milk. Just be patient with it and stir it around a couple times between the blending process to help it along if need be!
I also often add collagen powder or a scoop of protein powder to my smoothies to help with post workout recovery, and I often add a couple big handfuls of spinach or kale. You could do that with this one too!
The best summer breakfast! Have you ever had a smoothie bowl?
