Pepper Jack Stuffed Spicy Guacamole Burgers
Pepper Jack STUFFED burgers!! I don’t know of the last time I ate something so delicious. Mostly because a) they’re stuffed with delicious, spicy, melty cheese, and b) because they’re topped with lots of my favorite thing in the entire world: guacamole! More specifically, semi-spicy guac with jalapeño, garlic, lime, cilantro, and cherry tomatoes. LOVE.

Sorry for the photo of raw ground beef (haha I feel like some people might be grossed out by this?), but I wanted you to see exactly how I stuffed them. It’s really super easy. All you do is form your burger patties, break them in half to make two smaller patties, cut a slab of cheese and form the two patties together with the cheese in between!

You just have to make sure that it’s tightly “sealed” so that no cheese oozes out during the cooking process.

I ended up putting kale on the bottom for a little bit of greens (balance, right? It’s totally how I live my life), but you can use romaine, butter lettuce, spinach, or no greens at all!

Another idea for the other texture loving freaks like me, would be to add crushed up tortilla chips TO the burger. So mad I didn’t think of this earlier!

Growing up, I added Doritos to my turkey sandwiches allll the time. SO freaking good. Did anyone else do this?!

Now this guac isn’t spicy, it just has that little jalapeño kick. Since I removed the seeds and the ribs (which are the spicy part), it just leaves you with that mild jalapeño essence. I love it. If you aren’t a fan, you can leave the jalapeño out, or just use half!

For the burgers, I seasoned them with my favorite Mexican spices. Cumin, chili powder, garlic powder, onion powder, and smoked paprika. Every time I make tacos or burrito bowls, those are the spices I use. They’re so perfect together. No need to buy those packets when you can use what you’ve got on hand!

They are SO flavorful! Especially with the oozy cheese. I even ate these bunless a couple times and loved them just as much. My mom even ate one on top of a salad and said it was phenomenal! Now I’m thinking I gotta make a burger salad..maybe with some fries on it too!

Pepper Jack Stuffed Jalapeño Guacamole Burgers

These burgers are seasoned with taco spices and stuffed with pepper jack cheese! And we can't forget about the jalapeño guacamole! Super quick to make too!

Ingredients

For the guacamole

  • 2 avocados, pitted
  • juice of ½ a lime
  • 1 clove garlic, minced
  • 1 jalapeño, seeds and ribs removed, finely chopped
  • 3 tablespoons chopped cilantro
  • 2 tablespoons chopped red onion
  • 2 tablespoons diced cherry tomatoes
  • 1/4 teaspoon salt

For the burgers

  • 1 pound lean ground beef
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 ounces pepper jack cheese, cut into 4 slices
  • your favorite burger buns
  • lettuce/greens of your choice
  • jalapeño slices for serving, optional

Instructions

  1. Begin by making the guacamole. In a medium bowl, combine the avocados, lime juice, garlic, jalapeño, cilantro, red onion, tomato, and salt. Mash until desired consistency is reached. Set aside.

  2. Add the ground beef to a medium bowl. Add the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper and mix until combined. Using your hands to combine everything is the easiest method! Form into 4 equal sized patties. Then, break each patty in half, and form into two smaller patties.

  3. Lay patties on a plate and add 4 slices of pepper jack to four of the patties. Top each with the other "half" of the patty, forming it into a large patty, crimping the edges, making sure no cheese is peeking out.

  4. Preheat a large cast iron or nonstick skillet to medium high heat. Once hot, add the burgers. Cook for 4-5 minutes per side. Let burgers rest for a couple minutes.

  5. To assemble burgers, add lettuce to the bottom half of the bun, then the burger, and a scoop of guacamole. Top with jalapeño slices if using as well. Devour!
