Raise your hand of your body is craving some greens and nutrients after the holiday weekend! This salad will totally do the trick. It’s loaded with antioxidants, omega 3’s, and everything good for you. Hence, the name “power salads”. These are SO delicious and the best way to make easing into healthier eating a little more fun after a weekend of delicious, indulgent eats.
Or, just to add into your weekly dinner rotation! These are SO simple to make and customizable depending on what berries you have on hand, as well as protein. You could totally do chicken, shrimp, or your favorite kind of fish here! I’m just so partial to salmon. It’s too good!
If you didn’t know, I freaking LOVE salad. I eat at least one huge salad a day, sometimes two. So, I need to switch it up often or else I get bored. Mostly bored of the dressing. I try to make a new dressing every week, and I absolutely LOVE this one. Lemon, basil, honey, apple cider vinegar, olive oil, a little salt and pepper, and that’s it. So simple and fresh.
I also added feta, because everything is better with a little salty cheese. It totally ties everything together. Salty roasted sunflower seeds are the other delicious component to this salad. Gotta have crunch and salt, ALWAYS.
For the salmon, I used my favorite method under the broiler. Its not really a method actually, I just love cooking salmon under the broiler because it literally takes five minutes and creates that delicious crust we all love.

Spinach Powder Salads with Salmon and Lemon Honey Basil Vinaigrette
These spinach and salmon power salads are filled with tons of nutrients and are SO delicious! They are super easy to make and come together in 20 minutes!
Ingredients
For the salmon
- 2 portions of salmon, about 4-5 ounces each
- 1 teaspoon olive oil
- zest of 1/2 a lemon
- salt and pepper
For the dressing
- zest of 1/2 a lemon
- juice of 1 lemon
- 2 tablespoons apple cider vinegar
- 2 teaspoons honey
- 8 fresh basil leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup olive oil
For the salads
- 5-6 cups baby spinach
- 1/3 cup blueberries
- 1/3 cup raspberries
- 2 tablespoons roasted salted sunflower seeds
- 1/4 cup crumbled feta
Instructions
Preheat your oven's broiler to high. Place salmon on a parchment lined baking sheet and rub with olive oil and lemon zest. Season with salt and pepper. Broil for 5-6 minutes depending on the thickness of your filets.
While salmon is broiling, make the dressing. In a food processor or blender combine the lemon zest, lemon juice, apple cider vinegar, honey, basil, salt, pepper and olive oil. Blend until completely combined.
To serve salads, top spinach with the salmon, berries, sunflower seeds, and feta. Drizzle with desired amount of dressing and enjoy!
