Another healthy breakfast idea. So easy to put together and have it in the fridge all week for when you’re on the go in the morning. How pretty?! Can’t get over how gorg the little pomegranate arils are. It’s perfect to put in your breakfast rotation along with my avocado toast.
Makes 4-5 servings
2 c. unsweetened vanilla almond milk
2/3 c. 0% plain Greek yogurt
1 vanilla bean, seeds scraped (you can sub 1 tsp. vanilla extract)
1 tsp. cinnamon
1 T. honey
2 T. chia seeds
1 1/2 c. oats
1/2 c. pomegranate arils + more for topping
toasted almonds and coconut flakes for topping
First, whisk together the almond milk, yogurt, vanilla bean seeds, cinnamon, honey, and chia seeds until combined. Once combined, stir in the oats, then the pom seeds and put in a tupperware container overnight.
Enjoy in the morning with toasted almonds, toasted coconut, a drizzle of honey, a sprinkle of cinnamon, or really anything! You can top it with more fruit, sliced bananas, nut butter. Endless possibilities. LOVE the crunch with this version though.

Molly, wondering about cranberries w/ the overnight oats. Would I have to do anything different to them? I was thinking cranberries & almond slivers.

Hi Julie, cranberries and almonds would be great in this recipe! I’d use dried cranberries and I’d toast the almonds a little. You can add the cranberries just like you would the pomegranate seeds. Let me know if you try it!
