So this is one of my favorite go-to breakfasts I wanted to share with you.
I make this allll the time. I am someone who eats super healthy 90% of the time, even though it may not seem like that from my blog. It doesn’t reflect how I eat every day. Don’t get me wrong, I definitely love to indulge, but during the week especially I eat really well. I reserve the weekends for enjoying myself and indulging a bit more. This breakfast is great for post-workout or when you’re on-the-go. I always am. As much as I hate to admit it, I pretty much always eat breakfast in the car. There really aren’t enough hours in the day. All this is, is a piece of grainy bread from Whole Foods, toasted, and then I smash about a half an avocado on it with a fork. I top that with a couple handfuls of sauteéd spinach. (I just cook it in a little olive oil with sea salt and pepper until it is wilted). Then I top it with an over easy egg or scrambled eggs. This was one whole egg plus 2 egg whites. I needed some more protein that day after a workout, hence the extra whites. But, you can really prep the eggs however you like! I love love love this.
From now on, I am planning to post some more healthy recipes that reflect my everyday life, and some quicker on-the-go breakfast and snack ideas.
