Strawberry Caprese Avocado Toast with Burrata

This Strawberry Caprese Avocado Toast with Burrata is the perfect light summer appetizer, and only requires 6 ingredients! The combination of fresh strawberries, mashed avocado, creamy burrata cheese, and sweet balsamic glaze is absolutely to die for! The addition of fresh basil and sea salt puts it over the top!

Can we talk about the best summer appetizer to exist? That would be this strawberry avocado toast WITH burrata. And basil and balsamic glaze and flaky sea salt. I know I say this all the time, but the simplest recipes, with super fresh ingredients always end up being my favorites. In a perfect world, I’d eat this combination every day.

It truly cannot get any better. If burrata is involved, I’m always sold. And when avocado gets added into the mix?! Game over.

If you’ve never had burrata, it’s fresh mozzarella filled with cream, so when you break open the ball of mozzarella, this insanely creamy, decadent cheesy “cream” if you will – comes out. And it’s absolutely amazing. It’s something I always add to my cheese boards and appetizers in the summer.

I love eating it with fresh heirloom tomatoes in the summer, some balsamic, extra virgin olive oil, basil, chives, and flaky sea salt. And grilled bread. That’s honestly my dream meal. It cannot get any better than that.

Playing with the caprese theme, I decided to use strawberries instead of tomatoes, since we aren’t quite at the peak of tomato season yet. And I’ve been having a moment with strawberries.

After not having berries all winter long (and this winter was LONG), I’ve been eating lots of them! And loving. it.

My favorite kind of bread to use for this appetizer/snack/meal or whatever you wanna call it, is a super crusty, whole grain bread. I love breads that are covered in lots of seeds, grains, and oats, and that have a nice hearty chew and texture to them. But if you’re a sourdough kind of person, then by all means, use what you love!

Honestly, any kind of bread will be amazing here. The key is to toast it really well, so that it doesn’t get soggy from the avocado and burrata. But you’re going to eat these toasts so quickly that it won’t even matter. Trust me.

The key with the avocado is to mash it with a little squeeze of lemon and flaky sea salt. You won’t even taste the lemon in this, it just brightens it up and the flaky sea salt adds lots of amazing flavor, and helps to balance everything.

You could make your balsamic glaze from scratch, which I often do, (you literally just boil balsamic vinegar until it reduces and becomes syrupy), but in order to keep this as simple as possible, I used a balsamic glaze in a bottle that I purchased from the grocery store. I honestly love it when I’m in a pinch, and when it’s summer and I want to enjoy the nice weather with these toasts on the patio, the last thing I want to do is reduce balsamic vinegar. You know?

I’m definitely not one to judge for taking shortcuts. And I love how the balsamic glaze that you can get at the store is super thick. It’s sooo good.

And fresh basil is the other key to amazingness here. My mom and I were talking the other day about fresh herbs and how we love them so much, and could never ever decide what our favorite was. Basil? LOVE. Rosemary? LOVE. Cilantro? LOVE. Parsley? LOVE and also underrated in my opinion. Thyme? SO freaking good. And chives? Absolutely love them. Basically, we decided that anything you add fresh herbs to is going to be amazing.

Strawberry Caprese Avocado Toast with Burrata

This Strawberry Caprese Avocado Toast with Burrata is the perfect light summer appetizer, and only requires 6 ingredients! Ingredients

  • 4 thick slices crusty, whole grain bread, toasted*
  • 2 avocados, pitted
  • squeeze of lemon
  • flaky sea salt*
  • 6-8 ounces burrata
  • 1 cup sliced strawberries
  • fresh basil leaves
  • balsamic glaze*

Instructions

  1. Place avocados in a bowl and add a squeeze of lemon and a healthy pinch of flaky sea salt. Mash until desired consistency is reached. Spread onto toasts.

  2. Top toasts with pieces of burrata, sliced strawberries, fresh basil leaves, a drizzle of balsamic glaze, and another pinch of flaky sea salt, if desired. Enjoy immediately!

Recipe Notes

*I love using a crusty whole grain bread, but feel free to use whatever your favorite is! Just be sure to toast the bread really well, so it doesn't get soggy!
*For these toasts, I used a balsamic glaze that I purchased from the store, but you can make your own at home as well, by reducing balsamic vinegar until it becomes syrupy!
*If you don't have flaky sea salt, any kind will do, but I'd highly recommend this flaky salt. I use it everyday in my cooking and it's amazing!
