Strawberry French Toast with Honey Almond Coconut Drizzle + Strawberry Banana Almond Milk Smoothie

IMG_0478I made this breakfast for my mom and it was fabulous. I was playing around with flavors and I was trying to make a delicious, healthy alternative to french toast while using minimal sugar and butter. This whole recipe that serves two people only contains 1 T. of butter and 3 teaspoons of sugar. That is pretty awesome considering all of the high cal-heart attack breakfasts at restaurants these days.

And don’t forget about the smoothie..super healthy and refreshing. And it’s pink!

This was absolutely DELICIOUS. I know that V-Day is almost over, but this recipe is great any time! I just wanted to make a pretty pink festive one for today.

Serves: You and your loved one
Prep time: 20 minutes
Cook time: 30 minutes

For the strawberry sauce/compote:
-1 1/2 cups slices strawberries
-1/2 c. water
-1 tsp. lemon zest
-juice of 1 lemon
-3 tsp. sugar

For the almond butter honey coconut drizzle:
-2 T. almond butter
-3 T. honey
-2 T. coconut oil

For the french toast:
-4 slices of the bread of your choice
-1 egg
-2 tsp. cinnamon
-1 tsp. vanilla extract
-2 T. all purpose flour
-pinch of salt
-3 T. unsweetened vanilla almond milk
-1 T. coconut oil
-1 T. butter
-more sliced strawberries for garnish
-powdered sugar for garnish

For the smoothie:
-1 1/4 c. almond milk
-1/2 banana, sliced
-1 1/4 c. sliced strawberries
-drizzle of honey
-1 vanilla bean, scraped
-1 T. almond butter
-1 T. flax seed meal
-handful of ice

Begin by making the strawberry sauce. Combine sliced strawberries, water, lemon juice, lemon zest, and sugar, and bring to a boil. Reduce heat to medium/low, and simmer for 20 minutes, until strawberries have cooked down into a beautiful red sauce. Set aside.

Next, make the drizzle. Combine almond butter, honey, and coconut oil in a microwave safe bowl, and microwave for 1 minute, stopping after 30 seconds to stir. You may need to add an extra 30 seconds depending on how strong your microwave is. You just want to make sure all ingredients are melted and incorporated. Set aside.

If you are making the smoothie, you can make it at this point. Combine all ingredients for smoothie in a blender, and blend until smooth. Pour into pretty glasses and garnish with a sliced strawberry if desired!

Next, beat the wet ingredients together for the french toast. Mix the egg, almond milk, cinnamon, vanilla, flour, and salt together in a deep dish or plate with sides, so you can dip the french toast. Preheat skillet or griddle to med/high, and melt butter and coconut oil together. Dip bread slices in mixture, and then place on griddle and cook, 1-2 minutes per side or until golden.

Arrange 2 slices of french toast on each plate, and top with several spoonfuls of the strawberry sauce, as well as a sprinkle of fresh sliced strawberries. Next, drizzle the honey almond coconut sauce. Then, garnish with a dusting of powdered sugar. Serve with the smoothie, and enjoy! Make this for your loved ones.
