The original name I had for this salad was “Spinach Salad with Granny Smith Apples, Strawberries, Dried Cranberries, Pistachios, Chicken, and a Grapefruit Vinaigrette. I thought that Summery Spinach Salad pretty much explained it in waayy fewer words. But, you get the idea. This is perfect for a hot day when you just want something light and fresh. I’ve been putting a lot of fruit and my salads lately and loving it. You should definitely give it a try.
Serves 2
4-5 c. fresh baby spinach
1/2 granny smith apple, thinly sliced
4-5 strawberries, sliced
2 T. pistachios, shelled
2 T. dried cranberries
Grilled chicken (however much you’d like, I usually just prep a bunch of grilled chicken breasts for the week for salads and whatnot)
For the dressing:
Zest and juice of 1 grapefruit (You can also sub a lemon or lime or orange here, but use 2 for the smaller citrus)
1 tsp. stone ground dijon mustard
2 tsp. flat leaf parsley, chopped
1/3 c. extra virgin olive oil
salt and pepper to taste
To make dressing, combine all ingredients for dressing in a medium bowl and whisk together. Then, slowly stream in olive oil while whisking to combine. Season with salt and pepper to taste.
To assemble salads, potion spinach into bowls and top with apple slices, strawberries, pistachios, cranberries, and grilled chicken. Pour a couple tablespoons of dressing over each salad or desired amount. Toss and enjoy!
The perfect light summer meal.
