If you are sick of your normal breakfast routine, you should definitely make this. I personally love chai tea, and the combination of chai flavor with the peaches and pecans is to die for. Plus, I add a little extra cardamom and cinnamon for some spice. The perfect healthy summer breakfast.
Serves 1-2
3/4 c. oats
3/4 c. water
1 chai tea bag
1/2 c. unsweetened vanilla almond milk
1 tsp. vanilla extract
pinch of cardamom
pinch of salt
1 sliced peach
2 T. chopped toasted pecans
drizzle of honey
pinch of cinnamon
Begin by boiling 3/4 c. water, and steep chai tea bag in it for 2-3 minutes. Discard tea bag. Measure 1/2 c. almond milk and add vanilla, a healthy pinch of cardamom, and a pinch of salt. Add to tea and stir.
Put oats in a medium microwave safe bowl, and pour over tea/milk mixture. Microwave for 2 1/2 minutes, and then let stand for 2 minutes or so to let cool and let liquids absorb.
Portion into bowls and top with sliced peaches, chopped pecans, a drizzle of honey, and a pinch of cinnamon. I also added a little more milk over the top. (I like my oatmeal more liquidy).
