Warm Chia Pudding with Caramelized Bananas

This Warm Chia Pudding with Caramelized Bananas is so cozy and delicious! It’s topped with warm bananas sautéed in a little coconut oil, maple syrup, and cinnamon, and it tastes like bananas foster! Top it with berries and almond butter for a complete, healthy breakfast or snack!

I recently became OBSESSED with warm chia pudding and I cannot get enough! I’ve always loved cold chia pudding, because I absolutely love the texture and getting creative with toppings (always the best part!). But with these lingering cold days, I’ve wanted something warm for breakfast! Enter this warm chia pudding with caramelized bananas.

Or as I like to call it, bananas foster chia pudding! You would not believe the deliciousness of the caramelized bananas. I’m pretty sure I could just eat a big bowl of them and be the happiest girl alive. They develop this amazing flavor and they taste like dessert!

I sauté them in a little coconut oil, a tiny but of pure maple syrup, and cinnamon, and they are absolutely to die for. You could totally sub butter instead of coconut oil too! They’d probably be extra rich and delicious that way.

Another thing I like to do is add a little drizzle of maple syrup over the top, and a sprinkle of cinnamon. Because this girl can never ever get enough cinnamon!

Warm chia pudding is like having a cozy bowl of oatmeal but with more texture, antioxidants, and healthy fats! It feels lighter than oatmeal too. Sometimes I feel sluggish after eating oatmeal, but maybe that’s just me. It feels light and refreshing, even though it’s warm. If that makes any sense at all. 🙂

I’m more of a egg whites and veggies for breakfast kind of girl. Or avocado toast! Duh. But this is becoming a new fave!

Oh and how could I forget? Adding a scoop of almond butter or peanut butter on top makes this even more decadent and cozy.

But I feel that way about adding nut butter to pretty much everything. And I’m sure most of you guys do too! Whyyy is it so good?!

Oh and my most favorite part of this chia pudding is that it’s ready in just a few minutes! Instead of waiting hours or overnight for it to “gel up”, it only takes a few minutes on the stove. Awesome, right?

Because I’m super impatient when it comes to my food!

Warm Chia Pudding with Caramelized Bananas

This Warm Chia Pudding with Caramelized Bananas is so cozy and delicious! It's topped with warm bananas sautéed in a little coconut oil, maple syrup, and cinnamon, and it tastes like bananas foster! Top it with berries and almond butter for a complete, healthy breakfast or snack!

Ingredients

For the chia pudding

  • 2 cups unsweetened vanilla almond milk
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla extract
  • pinch of salt
  • berries for topping
  • almond butter for topping
  • cinnamon for topping
  • pure maple syrup for topping, optional

For the caramelized bananas

  • 2 teaspoons coconut oil
  • 2 medium bananas, sliced
  • 1 tablespoon pure maple syrup
  • pinch of salt
  • dash of cinnamon

Instructions

  1. Bring the almond milk and chia seeds to a boil. Once boiling, reduce heat to medium/medium-high and simmer for 2-3 minutes or until chia pudding becomes thick and creamy. Add the vanilla and salt and stir to combine.

  2. Meanwhile, heat a nonstick skillet over medium/medium-high heat and add the coconut oil. Add the bananas and cook for 1-2 minutes per side, or until they become golden and caramelized. Add the maple syrup, salt, and cinnamon and cook for an additional 1-2 minutes or until extra caramelized and golden.

  3. To serve, top the warm chia pudding with a handful of berries, the caramelized bananas, a scoop of almond butter, a sprinkle of cinnamon, and a drizzle of maple syrup. Serve immediately!

    i didn’t even know you could do warm chia pudding! this looks gorgeous!, i don’t like banana but my hubby would love those caramelized bananas!!!

    I can’t wait to try this! It’s winter and it’s cold, nobody needs cold chia. Especially early in the morning when your in a hurry to get to the gym.

    Tried this recipe out this morning and it was absolutely amazing!! I’ve never even had cold chia pudding so I had no idea what to expect! Will be sharing the recipe with family and friends!! Such a perfect breakfast recipe for cold mornings!

    I too had never done cold chia pudding, but I didn’t want to wait 6 hours to chill it 😂 this came out DELICIOUS and cooked quickly! I put little more syrup in my boyfriend’s serving and he too liked it! Thank you for this!

    I added a little cinnamon and maple syrup to the pudding and used butter instead of coconut oil because it’s what I had handy. I was out of vanilla extract so I used vanilla paste instead. Otherwise I followed everything as written and oh my gosh it’s the best thing I’ve had in a while!!! I LOVE bananas foster but it’s not healthy and too much dairy bothers my stomach. This is an amazing substitute! Thank you so much for posting this.
