Blood Orange Pomegranate Mimosas with Vanilla Bean Sugar + a video!

These mimosas are made with freshly squeezed blood orange juice and pomegranate juice! They have a vanilla bean sugar rim and are perfect for a special brunch or holiday gathering!

img_2749 I’m in love with these mimosas! They absolutely scream the holidays to me. The vanilla bean sugar rim mixed with the fresh blood orange juice and pomegranate juice is such an amazing combination. I kinda want to rim every cocktail with vanilla bean sugar from now on. I’m having a moment with vanilla bean..as you may have seen earlier this week!

These would be perfect for holiday brunch, or even Christmas morning! I’ve never been a huge mimosa lover until I had these. I just don’t love orange juice. These though, take things to a whole other level.

If you’ve ever had a blood orange, you know it’s not as citrusy as a regular orange. It almost tastes like fruit punch with a slight orange flavor. SO so good! I can’t get enough winter citrus. I love making salad dressings with it too.

I know that vanilla beans are pricy, but they’re SO worth it for this. You can use the leftover vanilla sugar for dusting over cookies, sprinkling on oatmeal, adding to coffee…and whatever else your little heart desires!

The best holiday brunch cocktail! Or anytime cocktail. I could totally use one of these right about now.

Blood Orange Mimosas with Vanilla Bean Sugar

These mimosas are made with freshly squeezed blood orange juice and pomegranate juice! They have a vanilla bean sugar rim and are perfect for a special brunch or holiday gathering!

Servings 1 cocktail, is easily multiplied

Ingredients

For the mimosa

  • 2 tablespoons freshly squeezed blood orange juice
  • 1 tablespoon pomegranate juice
  • champagne or prosecco
  • pomegranate seeds for garnish

For the vanilla bean sugar rim

  • 1/4 cup granulated sugar
  • 1 vanilla bean, seeds removed

Instructions

  1. Make the vanilla bean sugar. Put sugar onto a plate and add vanilla bean seeds. Massage the sugar and vanilla bean between your fingers to evenly disperse the seeds. This can take a couple of minutes.

  2. Rub an orange slice around the rim of the glass, then rim in the vanilla bean sugar. Add blood orange juice and pomegranate juice to the glass, then top with champagne or prosecco. Sprinkle in some pomegranate seeds to garnish!
