BLT Chicken Salad Lettuce Wraps

One of my absolute favorite things to make for lunch and/or meal prep for the week is lightened-up chicken salad that’s made with Greek yogurt. There’s no need for mayo and it’s soooo much healthier. You really can’t tell a difference. I actually prefer it. I play around with different variations, but this one was inspired by one of my favorite things: BLT’s. In the past, I’ve made a BLT grilled cheese as well as BLT Salmon Burgers. I can’t help it. Such an amazing combo. Salty bacon, beautiful juicy tomatoes, crisp lettuce, toasty bread, and usually avocado..because I’m clearly in love with it, if you haven’t noticed.

I thought it was time for another version of one of my favorite sandwiches, and this is it! You could certainly eat this on toasted bread, but I love it in the lettuce cups.

Jalapeño Turkey Burgers with Grilled Corn Cotija Salsa and Avocado

These burgers are seriously one of my favorite things I’ve had in awhile. I know I say that a lot, but these are SO good and the corn cotija salsa MAKES it. I can’t get enough corn in the summer, especially when it’s grilled. This is almost like Mexican street corn, but in salsa form…so if that doesn’t convince you to make these, I don’t know what will. Also the burgers are super healthy! I used 99% lean ground turkey, and whole wheat buns, and just a little crumbled cheese in the salsa for salty creaminess. I could eat these every darn day.

It’s seriously the perfect combination of sweet and savory and the crispy brown butter sage leaves….no comment. I’ve been putting them on everything this fall. Including this pizza. This combo of flavors is so freaking good. The burgers are super simple and flavorful, but the homemade condiments actually MAKE this sandwich. So does the bacon..but I figured that was a given.

This pesto is full of everything green and good for you. You can do a million things with it. Put it on pasta, use it as a spread on sandwiches, swirl it into hummus for a pesto hummus, spread it on toast and put a runny egg on top for a delicious brunch, use it as a pizza sauce…endless possibilities. The other day I even mixed it with marinara and it was SO good. Basically, you have to make this pesto. Plus it has kale! A good sneaky way to get greens in.

Apple Cider Pulled Chicken Sandwiches

This might sound weird to some of you…but these were SO GOOD. Super easy too! The pulled chicken is made in the crockpot, so there is next to no cooking involved. This is a perfect meal for a weeknight or when you are in a time crunch. It’s so full of flavor from the spice rub for the chicken, and the apple cider adds this amazing flavor and sweetness. I melted some creamy havarti over the chicken under the broiler and topped the sandwich with thinly sliced apples. A perfect, easy fall meal.

Apple Cheddar Grilled Cheese with Honey Sage Mascarpone Spread

I definitely have a thing for fruit grilled cheeses. This one is no exception. I wanted to make a fall inspired sandwich, and this definitely fits the bill. I used honeycrisp apples… the ONLY apples in my opinion..and added some freshly grated cheddar and this ridiculous creamy mascarpone spread. It has a little sweetness and one of my favorite herbs ever..sage. My mom used to make this chicken and pasta with a ton of sage and white wine when I was little alllll the time. I could never get enough of it. I have always loved sage. Ugh look at that crispy cheese stuck to the outside.

Do yourself a favor and make this.
