Irish Cream Chocolate Bread with Espresso Cream Cheese Glaze

Irish Cream Chocolate Bread with Espresso Cream Cheese Glaze
I feel like I should put a warning label on this thing. It’s SO chocolatey and full of Irish cream liquer. And lots of sugar and butter. And regular flour. All the good things. I know it’s not my normal “healthy” recipe on this wonderful Monday, but it’s darn good.

Paleo Bacon Brownies

Paleo Bacon Brownies
These brownies are the best combo of sweet and salty. One of my favorite combos in the whole world. They definitely don’t scream bacon. Just the tiniest amount of salty and savory to compliment the chocolatey flavor. You might be thinking “What?! Bacon in brownies…?” But trust me on this one. Not as weird as it sounds.

Espresso Vanilla Cashew Date Truffles

Espresso Vanilla Cashew Date Truffles
It’s no secret that I love energy bites made from dates, nuts, and various superfoods. They’re the best snack! I had the idea of covering them in chocolate and making them into a “truffle.” No idea why I hadn’t thought of this before. So delicious! Dare I say I like them better than regular truffles..

Salted Peanut Butter Cookie Lattes

img_3640
I have the perfect wake-up for this lovely holiday week Monday morning! Salted peanut butter cookie lattes. Say it with me.

SO good you guys. Combining my love of peanut butter with coffee was only a matter of time. And what better week to do it? It’s been so so cold, we got our first little bit of snow this weekend, and I need some extra energy to get me through this last week of hustle and bustle!

Dark Chocolate Peppermint Coconut Oil Cookies

img_2952
I’m finally getting around to posting a Christmas cookie recipe on the site! I’ve been wanting to post them since I made a Halloween version on Instagram. I LOVE these cookies. They don’t require a mixer or any chilling time, which are huge bonuses for me. I’m too impatient to wait for cookie dough to chill! Although, it is sometimes necessary. Not with these beauties though. You’re minutes away from super delicious dark chocolate peppermint cookies that taste like the holidays.

Flourless Chocolate Hazelnut Brownies

img_2220
These might be the fudgiest, most delicious brownies I’ve ever had. And I’ve had a lot of brownies. They’re definitely my dessert of choice. I’ll choose them over freshly baked cookies, cake, pie, you name it. I can’t help it! They’re just too good. These are FLOURLESS and made from ground up hazelnuts and dark chocolate. Then drizzled with more dark chocolate. So rich and decadent. There’s really no other way to describe them!

Whole Wheat Baked Chai Donuts + Homemade Iced Chai Lattes

img_9978
This is a total Friday/end of the week celebration/weekend treat. I lightened the donuts up just a bit by using whole wheat pastry flour and coconut oil, and the chai lattes are sweetened with pure maple syrup. So, they’re not a complete sugar bomb, but definitely a treat.

I don’t know about you, but I love chai. I find myself craving it more as the chillier weather hits. It’s such a comforting, warm blend of spices. My mom however, is an avid chai tea drinker. Not the chai lattes you might be thinking of, but black chai tea. She’s been drinking it every day for as long as I can remember.

Pumpkin Almond Butter Bars with Gingersnap Crust

img_9499
To be honest, I’ve never been a big pumpkin pie fan. I mean it’s good, but doesn’t make me swoon like a rich fudge brownie, chocolate chip cookie, or a chocolate peanut butter dessert. Pies in general don’t do much for me. Call me crazy! I’ll always have a slice of pumpkin pie at Thanksgiving, but that’s it. I don’t think about it for the rest of the year. Pumpkin BREAD on the other hand..totally different story. Obsessed to say the least.

These bars are making me change my tune! They’re reminiscent of pumpkin pie, but so much healthier, and they pack a gingery bite from the gingersnaps! They’re almost paleo, except for the gingersnap crust. I wouldn’t judge you if you ate one for breakfast or for a snack.

Plum Raspberry Amaretto Galette

IMG_5782
Can summer desserts be beat? I don’t think so. Unless we’re in a super rich chocolatey mood (which definitely happens), but there’s something so amazing about fresh summer stone fruits and berries baked together. Whether it be in a crisp, a crumble, a pie, a crostata/galette (p.s. what do you call them?! I call them both..), or a just served with whipped cream! Too good. This one is filled with amaretto, plums, raspberries, and a little cinnamon, then topped with crunchy toasted almonds and sparkly coarse sugar on the edges. Simple and beautiful!

Mini Oatmeal Chocolate Chip Froyo Cookie Sandwiches

IMG_3793
There’s something SO nostalgic and SO summery about ice cream sandwiches. I remember eating them allll the time as a kid, (either the classic rectangle variety, or the huge chocolate chip cookie/vanilla ice cream ones rolled in mini chips), while laying by the pool without a care in the world. So darn good.

This is my effort to make a lightened up version of a favorite summertime treat, but with an oatmeal cookie and frozen yogurt filling! These are so delicious and healthy enough even for a snack!…or breakfast. No judgement. 🙂
