I used Greek yogurt to keep things a little lighter, and cilantro lime cauliflower rice for a low carb option! It’s no secret I love cauliflower rice. It’s just so good and versatile. This is something I make nearly EVERY single week for meal prep. I love it SO much. I love getting in a bunch of veggies, greens, protein, good carbs, and healthy fats after my early morning workouts, and this provides just that. I used to sauté a bunch of vegetables and egg whites in the morning and make an egg/veggie scramble, but these days, I’m short on time in the mornings. This frittata completely solves that issue. I make it on Sundays, portion it out, and keep it in the fridge. I top it with avocado sometimes, or serve it with a piece of avocado or peanut butter toast if I need extra fuel. Which is often.

Say hello to the most cozy, healthy fall breakfast! I am officially OBSESSED with this vanilla bean ghee. I’ve been making butter coffee with it every morning, and I dreamt up this breakfast recipe using it! If you aren’t familiar with ghee, it’s a clarified butter, so it’s dairy free, and super good for you. It has tons of health benefits including good fats and vitamins. I loooove this ghee because it has a subtle vanilla bean flavor. Btw, this post isn’t sponsored at all..I just really love this ghee! Sidenote: you could totally use coconut oil here if you wanted!

Hi! How was your weekend? Mine was super relaxing and filled with meal prep, cooking for clients, and going on walks because this fall weather is absolute perfection. I never want it to leave. As it gets chiller, I thought this paleo sweet potato turkey chili would be perfect for our #mealprepmonday theme! It definitely has kick, so it’ll warm your insides. I’m usually a fan of beans in my chili, but with this one I left them out. I really liked it as is, and there’s enough protein from the turkey. But, feel free to add some black beans or quinoa if you want it to be a little heartier!
