This salad will brighten the dreariest of winter days. It’s this time of year that I start craving more fresh, summery foods. I can just sense the days getting a litttttle bit longer, and having the sun rise a little earlier has been wonderful. I also can’t stop with the blood oranges. They’re so stunning, obviously, but their flavor is out of this world. They’re not as “orangey” as a typical navel orange..almost more fruit punchy? Or something? Don’t quote me on that. Mexican food will forever be in my top, well, if not my FAVORITE type of food. I hate saying favorite, because I have so many “favorites”..cue eye roll. I really just LOVE so many things. I’m serious about the Mexican food though. I could eat tacos, taco salads, fajitas, enchiladas, chilaquiles, huevos rancheros, chips and guac, and margaritas for seriously every meal and never get sick of them. Hearty winter salads are the best! It’s officially SO COLD here in Maryland and I’m not happy about it. I’m such a warm weather girl at heart, so the winter isn’t exactly my favorite time. I absolutely love the holidays and this time of year, but come January 1st, I’m ready for shorts again.

Garlicky balsamic glazed chicken with a little fresh thyme, sweet roasted beets (they’re like candy to me), and bacon, of course. All topped on a bed of kale massaged in a mustard maple vinaigrette! Balsamic Roasted Blueberry Arugula Salad

Adding fruit to salad is a MUST in the summer. I’m always trying to cram as many summer ingredients as I can into my meals lately, especially as the end of summer gets closer. My fridge is packed with all the berries, greens, melon, heirloom tomatoes, peaches, and avocados of course.

Eating seasonally is so much fun and this salad is a perfect example of that. Instead of just tossing fresh blueberries in the salad, I roasted them in the oven with a little balsamic and honey. They burst and get super sweet, as well as develop this richness that is to die for. No boring salads around here!
