Apple Cider Mojitos

If you are looking for a fun fall/Thanksgiving cocktail..this is it. These are SO good. The cider spiced flavor mixed with the lime, mint, and a splash of ginger beer is so refreshing and delish. These are super easy to make and easily multiplied for a crowd. No simple syrup required either!

If you or your guests don’t like ginger, you can sub a splash of club soda for the ginger beer.

Apple Cider Mojitos

Course Cocktail
Prep Time 10 minutes
Total Time 10 minutes
Servings 1 drink, but is easily multiplied

Ingredients

  • 2 T. granulated sugar
  • 1 tsp. cinnamon
  • 4 oz. apple cider
  • 2 oz. spiced rum
  • 1.5 oz. lime juice
  • 5-6 mint leaves
  • 1/2-1 oz. ginger beer
  • additional limes for garnish
  • mint sprigs for garnish
  • diced apple
  • ice

Instructions

  1. Begin by mixing the cinnamon and sugar on a small plate. Take the glass and rub a lime wedge around the edge, and rim the glass with the cinnamon sugar. Add lime juice and mint leaves to the glass and muddle with a muddler or end of a wooden spoon. Add several ice cubes to the glass.
  2. Add a few ice cubes to a cocktail shaker, and add cider and rum to the shaker. Shake vigorously for 15 seconds. Pour into glass and top with diced apple, then the splash of ginger beer. It is very strong, so you only need about 1/2 an ounce! Garnish with additional lime and mint springs.
