This Apple Pie Bourbon Fizz is made with bourbon, homemade apple pie spiced simple syrup, apple cider, and a splash of soda water! It’s the perfect amount of sweet and the most wonderful cocktail for fall! I love garnishing it with honeycrisp apple slices and a cinnamon stick!

Nothing makes me as happy as this season. Fall is SO incredibly special to me, and always has been. Everything about it just makes me giddy. I live for this season, and always have. I make a fall bucket list every year, (as basic as that sounds), and there’s never enough time to do it all! One of those bucket list items is always making new fall cocktails. It is part of my job, but it is something I love to do for fun too! These are SO GOOD you guys. Omg.

They literally taste like bourbon apple pie and even though it’s a cold beverage, it warms you up. The spices in the simple syrup, the bourbon, and the apple cider just make it taste “cozy”. It’s the best.

It all starts with the apple pie simple syrup! Yes, you heard that right. Basically all you do, is simmer brown sugar, water, honeycrisp apple, vanilla extract, cinnamon, nutmeg, ginger, cardamom, and allspice for a few minutes, cool, and then strain it! It’s SO incredibly delicious and I want to add it to everything this season.

Using brown sugar instead of regular granulated sugar in the simple syrup reallllly makes it. It adds that caramelly, rich sweetness and makes this taste like pie. Amazing.

And the other best part, is the apple pie sugar rim! It’s basically the same idea, just apple pie spices and sugar, mixed together to make the rim. Just adds a little extra spice in every sip! And makes them extra pretty!

You can make these as sweet or not sweet as you want them to be. As written, I’d say they’re moderately sweet, but if you like a little more of a bourbon punch, use less simple syrup, and if you like things super sweet, add more! You might want to double the simple syrup too. Just sayin’. I’m keeping a batch in the fridge all fall long to add to stuff!

If you want to entertain with these, you could totally make them pitcher style. Just measure everything out in the quantities that you need, and don’t add the ice and soda water until you’re ready to serve to guests!

You can have all the glasses rimmed in the apple pie sugar and have them ready to go also!

And I always garnish these with honeycrisp slices and cinnamon sticks because they’re the best apple ever and you can’t go wrong with a little extra cinnamon flavor. And they’re fun to stir your drink with!

Basically, these taste like fall in a glass and you need them this weekend!

  • 1 cup light brown sugar, loosely packed
  • 1 honeycrisp apple, diced
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon allspice

For the apple pie sugar rim

  • 2 tablespoons granulated sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon allspice

For the bourbon fizz

  • 2 1/2 ounces bourbon
  • 2 ounces apple pie simple syrup
  • 2 ounces apple cider
  • 3 ounces soda water
  • honeycrisp apple slices for garnish
  • cinnamon sticks for garnish

Instructions

Apple pie simple syrup

  1. In a medium saucepan, combine the water, brown sugar, apple, vanilla, cinnamon, nutmeg, ginger, cardamom, and allspice. Bring to a boil and simmer for 2-3 minutes. Let cool completely, then strain through a fine mesh strainer into a bowl and discard the apples.

Apple pie sugar rim

  1. To a plate, add the sugar and spices and mix together with your fingers.

Bourbon fizz

  1. Moisten the edge of your glass with apple cider and rim in the apple pie sugar. Fill with crushed ice. Add a few ice cubes to a cocktail shaker and add the bourbon, simple syrup, and apple cider. Shake for 20-30 seconds and pour into the glass. Top with the soda water and stir to combine. Garnish with honeycrisp slices and a cinnamon stick!

Recipe Notes

*Extra apple pie simple syrup will keep in the fridge for up to 2 weeks! I love using it for any and all fall cocktails, sangria, desserts, pancakes, ice cream, and anything your heart desires!
*If you want to make these pitcher style to serve a crowd, just measure everything out in the quantities that you need, and don’t add the ice and soda water until you’re ready to serve to guests! You can rim all of your glasses in the apple pie sugar and have those ready to go as well!
