Dark Chocolate Chai Cashew Butter Rice Crispy Treats

These Dark Chocolate Chai Cashew Butter Rice Crispy Treats are a grown-up, healthier take on the classic snack we all know and love. They’re made with brown rice cereal, cashew butter, chai spices, and maple syrup, and they’re topped with a layer of dark chocolate and flaky sea salt. There insanely delicious and addicting, and they keep great in the freezer for whenever you need something a little sweet!

Get ready for the most addicting healthy treat of your life. These are SO amazingly good you guys. I can’t even deal with it! I’ve always been a lover of the real deal, butter-laden, marshmallow-filled rice crispy treats. Especially of the homemade variety. I mean, who doesn’t?! But these right here, give those a run for their money. I’m keeping a batch in the freezer at all times, from now on. I can’t believe how delicious they are!

Actually I can, because how can you go wrong with rice crisp cereal, cashew butter, chai spices, maple syrup, and hint of vanilla, dark chocolate, and sea salt?!

You really can’t. The combo is absolutely out of this world! What’s not to love, seriously?

These seriously come together in mere minutes. Which is actually prettttty dangerous, since I usually have all of the ingredients to make these at any given time.

Literally all you do, is melt cashew butter, maple syrup, chai spices, salt, and vanilla over the stove for a minute until the mixture is smooth and pourable, mix it with the rice crispies, press it into a pan, and cover it in melted dark chocolate and a few pinches of flaky salt. Then, just throw them in a freezer to set, and you’re done! That’s literally it.

The best ever no bake dessert! Or snack, really. These are completely snack worthy in my book!

I used cashew butter in these because I love it’s creamy, almost vanilla-y cake-like flavor. I truly think cashew butter tastes like that. Especially raw cashew butter. I prefer it over roasted, but either will work! You could also sub almond or peanut butter, but those might overtake the chai flavor a little bit.

This is the cashew butter I’m obsessed with. It’s seriously a dream. It’s almost whipped in texture it’s so light. I can’t get over it. Truly incredible! This isn’t sponsored at all, I just really love their cashew butter and recommend it highly!

Along with the flaky sea salt on top, I love dusting these with a little extra cinnamon and cardamom, because in my mind, you can never have too much chai! It’s totally optional, but it makes them extra pretty too.

I’d definitely recommend keeping these in the freezer. They’ll keep for up to a month, and they only take a few minutes to defrost. I find they hold together a little better when they’re cold too!

The fridge will work also. I just prefer freezer so I’m not tempted to eat the entire batch in one sitting. Which let me tell you, is not hard to do!

These are so light and crunchy, not sticky and rich like a typical rice crispy treat is, so they’re perfect for a lighter dessert. I just love them so much, they’re perfect for really any time. Kind of like this cake.

Dark Chocolate Chai Cashew Butter Rice Crispy Treats

These Dark Chocolate Chai Cashew Butter Rice Crispy Treats are a grown-up, healthier take on the classic snack we all know and love. They're made with brown rice cereal, cashew butter, chai spices, and maple syrup, and they're topped with a layer of dark chocolate and flaky sea salt. There insanely delicious and addicting, and they keep great in the freezer for whenever you need something a little sweet!

Ingredients

  • 1/2 cup cashew butter*
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 cups brown rice crisp cereal*
  • 10 ounces dark chocolate, chopped
  • flaky sea salt

Instructions

  1. Line an 8x8 square baking dish with parchment and spray with nonstick spray. Set aside.

  2. Combine the cashew butter, maple syrup, vanilla, cinnamon, cardamom, ginger, cloves, nutmeg, and salt in a medium saucepan. Heat over medium-low heat for a minute or so until melted. Whisk to combine.

  3. Add brown rice crispies to a medium mixing bowl and add the cashew butter mixture. Stir until completely combined and cereal is moistened. Press mixture firmly and evenly into prepared pan.

  4. Add chopped chocolate into a medium microwave safe bowl and heat in 30 second increments, stirring in between, until melted. Be careful not to overheat, as the chocolate will seize up! Pour chocolate over the crispy treats and spread evenly with the back of a spoon or rubber spatula. Sprinkle with sea salt. Freeze until the chocolate is set, then cut into bars and enjoy! I like to sprinkle mine with a little extra cinnamon and cardamom, but that's completely optional!

Recipe Notes

*This is the cashew butter I use and love. It's incredible. Any cashew butter will work here though! You could sub almond or peanut butter, but they may overpower the chai spices!
*I used these brown rice crisps!
*Crispy treats will keep in the freezer for up to 1 month!
