I’m sitting here enjoying a little glass of rosé and wondering whyyyy these summer weekends have to go by so quickly. Even though fall is my absolute favorite season in every way, summer is still up there for me. I love the warm weather and sunshine. It seriously has the biggest impact on my mood. If it’s raining outside, there’s an 100% chance that I’m super crabby and irritable. I can’t help it!
On to this salad. I love making stuff like this in the summer. It’s super crunchy and full of tonnnns of flavor and veggies. I’m also OBSESSED with these sesame honey cashews from Trader Joe’s. They are the most addicting things ever. You’ve been warned.
The crunch factor here is unreal. My favorite kind of meal. We’ve got super crunchy slaw mix (I used a cabbage brussels carrot mix), red bell pepper, yellow bell pepper, shredded chicken, scallions, cilantro, and my beloved sesame honey cashews.
I can’t even.
The dressing is another love of mine. The cashew butter makes it super creamy and it’s filled with fresh ginger, garlic, sesame oil, and lime. I could drink the stuff. It’s super delicious on just about anything. I’ve put it over rice/veggie/protein bowls, dipped chicken and shrimp in it, and snacked on veggies with it too.
Super perfect for summer and it works great for prepping ahead of time. I’d keep the dressing separate from the rest of the ingredients, and then just toss when ready! No one likes a soggy salad.

Asian Sesame Slaw Salad with Chicken and Cashew Ginger Dressing
This super crunchy slaw salad is filled with fresh veggies, chicken, and a super creamy and delicious cashew ginger sesame garlic dressing!
Ingredients
For the salad
- 6 cups slaw mix (I used a cabbage, carrot, brussels mix)
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cups shredded chicken
- 3 scallions, thinly sliced
- 1/2 cup chopped cilantro, plus extra for serving
- 1/2 cup sesame honey cashews, plus extra for serving (I buy mine at Trader Joe's)
For the cashew ginger dressing
- juice of 1 lime
- 2 tablespoons rice wine vinegar
- 2 teaspoons soy sauce
- 2 teaspoons sesame oil
- 1 tablespoon honey
- 1/3 cup creamy cashew butter
- 1 clove garlic, minced
- 2 teaspoons freshly grated ginger
- 2 tablespoons hot water
Instructions
Combine slaw mix, red bell peppers, yellow bell peppers, shredded chicken, scallions, cilantro, and sesame honey cashews in a large bowl. Toss to combine.
Make the dressing. In a medium bowl, whisk together the lime juice, rice wine vinegar, soy sauce, sesame oil, honey, cashew butter, garlic, and ginger. Whisk to combine. Add the hot water and whisk again until very smooth and creamy.
Pour dressing over salad and toss to coat. Serve with extra chopped cilantro and cashews.
Stumbled across your blog recently while looking for new asian slaw recipes. Finally got around to making this today.. I didn;t have the exact cashews (but will pick them up on my next trip to TJs), but the dressing….just wow. So good! Can’t wait to try more of your recipes. The peach crumble bars are next!
