Dirty Chai Cashew Energy Bites

These energy bites taste just like a dirty chai latte and they’re fantastic to make for meal prep for easy, healthy snacks and dessert during the week! They’re gluten free and refined sugar free as well!

Dirty chai’s are one of my favorite drinks for when I want a treat or something special. I don’t often make them at home, but they are darn good. I love chai spices mixed with rich espresso flavor and steamed milk. It’s so comforting and warm.

That’s how these bites came to be.

Dirty Chai Cashew Energy Bites

I know I’ve been giving you guys a lot of meal prep friendly recipes lately, but I hope it’s helpful! I’m all about making lives easier and healthier and showing you that whole, real food can be simple to make and delicious. Not boring! I can’t deal with boring.

I need variety in my life. Variety when it comes to flavors, textures, and really everything for that matter. I can’t deal with “meal prep” that only includes brown rice, baked chicken, and steamed broccoli. No no no.

Dirty Chai Cashew Energy Bites

Having snacks like these on hand totally saves my life. Hungry before an early morning workout? Pop one or two of these. Mid-afternoon sweet craving? Pop one of these. Feeling like you need a little dessert? Dirty chai cashew energy bites! Useful for every scenario.

If you’re doing Whole 30 or follow a paleo diet, these are compliant. It’s just cashews, spices, chia seeds, and espresso powder. That’s it!

I keep these in the freezer if I don’t think I’ll eat a whole batch in a week. They freeze super well. Love!

Dirty Chai Cashew Energy Bites

These energy bites taste just like a dirty chai latte and they're fantastic to make for meal prep for easy, healthy snacks and dessert during the week! They're gluten free and refined sugar free as well!

Ingredients

For the bites

  • 1 1/2 cups medjool dates (18-20 dates), packed then pitted
  • 1 cup cashews
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 teaspoon espresso powder
  • 2 teaspoons chia seeds
  • pinch of salt
  • 1/2-1 tablespoon hot water (if needed)

For the coating

  • 1 tablespoon unsweetened cocoa or cacao powder
  • 1/2 teaspoon espresso powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamom

Instructions

  1. Add cashews, cinnamon, cardamom, allspice, cloves, ginger, salt and chia seeds to a food processor and pulse until finely ground. Add the dates and blend until mixture forms a "dough." If it seems too dry, add ½ tablespoon of hot water and blend again. If it still needs more, add another ½ tablespoon of water and pulse until mixture comes together.

  2. In a small bowl, combine the cacao or cocoa powder, espresso powder, cinnamon, and cardamom.

  3. Form mixture into balls and roll in spice mixture, dusting off excess. Should make about 10-15 bites depending on their size. Keep refrigerated for up to 1 week!

    I can’t believe I’ve never had a dirty chai! However, I love coffee and of course I love chai so I think I would adore these little healthy bites!
