Grilled Pineapple Jalapeño Avocado Salsa

This Grilled Pineapple Jalapeño Avocado Salsa is a simple, super flavorful dip for chips or a topping for grilled meats and seafood! It’s only 6 ingredients and comes together in minutes. The caramelized, grilled pineapple puts this salsa on another level! Perfect for summer parties and grilling!

Forget chips, I need a shovel for this salsa. OMG. I always forget how much I love grilled pineapple. I never really remember to grill it, unless it’s summer. So it’s probably been a whole year since I tasted the amazingness that is grilled pineapple. This is my new summer topping for evvvverything.

Like, I want to put this on everything that I eat for the rest of forever. Salmon would be AMAZING with this, grilled chicken, shrimp, and even flank steak! And chips, obviously. My favorite food in the whole world. Is that embarrassing?

I just reallllly love chips. Ask anyone that knows me well. I really love them to the point that people get me chips for my birthday and Christmas. Ha.

It’s happened more times I’d like to admit. 😂

The best part about this salsa (other than the fact that it’s crazy delicious) is that it’s SO easy. 6 ingredients! And pretty much one bowl! Other than grilling the pineapple. Which is probably the easiest part because it takes four minutes. Literally.

It was really hard to not devour that entire plate of grilled pineapple right then and there.

How stunning is this bowl? I know I say this ALL the time, but it always amazes me how the simplest of ingredients and recipes are often my favorite. All you need is super fresh produce, citrus, herbs, and salt to make something out-of-this-world.

This is one of those recipes.

The grilled pineapple against the creaminess of the avocado is just to die for. The grilled pineapple also gets SUPER juicy and those juices mix with the lime and it’s just amazing. I really have no words.

Grilled Pineapple Jalapeño Avocado Salsa

This Grilled Pineapple Jalapeño Avocado Salsa is a simple, super flavorful dip for chips or a topping for grilled meats and seafood! It's only 6 ingredients and comes together in minutes. The caramelized, grilled pineapple puts this salsa on another level! Perfect for summer parties and grilling!

Ingredients

  • 1 pineapple, cored and sliced into spears or rings
  • 1/2 cup diced red onion
  • 1 jalapeño, seeds and ribs removed, finely chopped
  • 1/4 cup chopped cilantro
  • juice of 1 1/2 limes
  • 1/4-1/2 teaspoon salt
  • 1 avocado, pitted and diced
  • your favorite chips for serving

Instructions

  1. Heat an outdoor grill or grill pan to medium-high heat. Grill the pineapple slices for 2 minutes per side, or until grill marks appear. Remove from heat and let cool for a few minutes. Once cool enough to handle, dice the pineapple into small pieces.

  2. In a medium bowl, mix together the pineapple, red onion, jalapeño, cilantro, lime juice, and salt (start with 1/4 teaspoon). Once mixed together, add the avocado and stir once more to combine. Season to taste with additional salt if desired. Serve immediately with chips or whatever your heart desires!

Recipe Notes

*I love serving this salsa with chips, but it's also phenomenal with grilled seafood and chicken.
*This salsa is best on the day it's made, but I've eaten it up to a few days after and it's still beed good!
*I've even put it on salads in place of dressing. SO GOOD.
