Healthy Nutella Sea Salt Truffles

These Healthy Nutella Sea Salt Truffles are an incredibly delicious chocolatey treat, made with only 6 ingredients! All you need: dates, hazelnuts, vanilla, cocoa powder, dark chocolate, and sea salt! They taste just like nutella, and they’re much better for you!

I’ve been on a major hazelnut kick lately. I can’t stop adding them to everything. Like this creamed kale and this salad! I’ve always been obsessed with anything and everything hazelnut, and I knew I wanted to make a treat for the holidays that were on the healthier side, but that still felt indulgent. These are the ticket. They’re SO amazing and they taste just like those ferrero rocher candies I was obsessed with as a kid!

I can’t even stand how good these are. They’re dangerously good, and actually not bad for you at all. I’d even consider them a snack! They made from just dates, hazelnuts (I get the dry roasted version from Trader Joe’s and they’re SO good), vanilla extract, and cocoa powder! Then, you coat them in dark chocolate, chopped hazelnuts, and flaky sea salt.

Basically all I ever want in life!

I’ve always been such a sucker for the chocolate hazelnut combo.

And the best part – they’re incredibly simple to make, and all you need is a food processor. The “batter” comes together in literally a minute or two, depending on how fresh your dates are.

And then, all you have to do, is roll them into balls, dip them in your favorite dark chocolate, and sprinkle them with some chopped hazelnuts, and flaky sea salt.

These little beauties are also the perfect treat to make for Christmas gifts, or to add to your cookie trays this year! I like having one no-bake option, and these are definitely my contribution to our annual cookie exchange this year! Along with a couple other cookie recipes I’ll be sharing on the blog very soon!

I like to keep these in the fridge, one, because I love cold chocolate, and two, because they last forever in the fridge. But let’s be real, these won’t last long at all – they’re too addicting! The good thing is, you really only need one because they’re so rich. Just one is seriously so satisfying, and I rarely say that.

They also freeze really well if that’s your thing!

To decorate these, all I did was coat them in chocolate, stick them in the freezer for 10 minutes or so to set them, then drizzle them with a little dark chocolate, and quickly sprinkle them with some chopped hazelnuts and flaky sea salt before they set! Seriously so easy.

Another idea would be to drizzle them with white or milk chocolate for a pop of color, and/or sprinkle them with some festive holiday sprinkles! Kind of like I did with these.

I was actually shocked at how much these tasted like nutella and those ferrero richer candies. And dare I say I like these better!

Healthy Nutella Sea Salt Truffles

These Healthy Nutella Sea Salt Truffles are an incredibly delicious chocolatey treat, made with only 6 ingredients! All you need: dates, hazelnuts, vanilla, cocoa powder, dark chocolate, and sea salt! They taste just like nutella, and they're much better for you!

Ingredients

  • 1 cup dry roasted hazelnuts*
  • 3 tablespoons unsweetened natural cocoa powder
  • 1/4 teaspoon salt
  • 1 1/2 cups packed medjool dates (about 16 dates)
  • 1/2 teaspoon vanilla extract
  • 6 ounces dark chocolate, chopped
  • chopped dry roasted hazelnuts for sprinkling
  • flaky sea salt for sprinkling

Instructions

  1. To a food processor, add the hazelnuts, cocoa powder, and salt. Pulse until very finely ground, like a coarse sand. Add the dates and vanilla and process until mixture forms a "dough". This might take several minutes, and you might have to stop and stir in the process to get things moving.

  2. Roll mixture into 17-20 balls and place on a parchment lined plate or baking dish. Place chopped chocolate in a microwave safe bowl and microwave in 30 second increments or until melted, stirring in between. Mine took about 1 1/2 minutes.

  3. Using a fork, carefully coat the balls in the chocolate, letting the excess drain off through the fork. Repeat until all truffles are coated. Place truffles in the freezer for about 10 minutes, until the chocolate sets.

  4. Drizzle the truffles with thin drizzles of dark chocolate, then quickly sprinkle with the chopped hazelnuts and flaky sea salt (the chocolate will set up fast because the balls are cold!) Repeat until all truffles are decorated. Enjoy! These keep great in the fridge for up to 2 weeks!

Recipe Notes

*I buy dry-roasted, unsalted hazelnuts from Trader Joe's, but if you can't find them, just toast raw hazelnuts in a dry skillet for several minutes until they're toasted and fragrant!
*This is the flaky sea salt I use and love!
