It’s no secret that I love energy bites made from dates, nuts, and various superfoods. They’re the best snack! I had the idea of covering them in chocolate and making them into a “truffle.” No idea why I hadn’t thought of this before. So delicious! Dare I say I like them better than regular truffles..
It all starts with my pretty basic energy bite base. Cashews, dates, vanilla, espresso powder, cashew butter, and salt.
This combo works for pretty much any type of nut, nut butter, and whatever spices you like. I love adding cinnamon too!
I used a mixture of dark and milk chocolate to make them super pretty and festive. Then, I topped them with gold sprinkles! Another way to make these extra festive: add a tablespoon or two of your favorite liquer to the “dough!” Coffee liquer would be fabulous here.
I thought these would be the perfect dessert for a New Years Eve get together. To be honest, I’m kind of over all the cookies, cakes, and sweets. Not saying I’ll turn that sweet stuff down, but I feel so much better about eating these truffles. And I actually like them more!
I’ll even go as far to say that they’re a perfectly acceptable any day snack.

Are you a big New Years Eve partier? I’ve never been one to go out on NYE. I’ve always gone to low-key get togethers at family friends’ houses or just chilled at home with family. Either way, these are the perfect snacky dessert to serve or take with you at the bar. Not kidding.
Espresso Vanilla Cashew Date Truffles
These truffles are made healthier with a mixture of dates, cashews, and cashew butter! They are flavored with vanilla and espresso powder, a touch of liquer, and then covered in chocolate. They're a perfect healthy dessert for when that sweet craving strikes!
Ingredients
- 1 1/2 cups packed medjool dates (about 18 dates)
- 1 cup raw unsalted cashews
- 2 teaspoons pure vanilla extract
- 1 teaspoon vanilla bean paste (can sub one more teaspoon of vanilla)
- 1 1/2 tablespoons espresso powder
- 1/4 cup creamy cashew butter
- pinch of salt
- 1 or 2 tablespoons of your favorite liquer (coffee flavored liquer would be delish here!), optional
- 5 ounces white chocolate, chopped
- 5 ounces dark chocolate, chopped
- gold sprinkles for decorating, optional
Instructions
Place cashews in a food processor and pulse until very fine in texture. Not quite flour, but close. Add the dates, vanilla, vanilla bean paste, espresso powder, cashew butter, salt, and liquer if using. Process until the mixture forms a "dough."
Roll mixture into balls. It should make 15-20 depending on their size. Place on a tray or in a pan in an even layer and freeze for 30 minutes.
Melt the white chocolate and dark chocolate in separate bowls, microwaving in 30 second increments until melted. Dip half of the balls in the white chocolate, and half in the dark, and then drizzle with the opposite chocolate and sprinkle with gold sprinkles!
