I had the pleasure of being invited to St. Maarten with my best friend and her family on their vacation during the first week of March. It was an amazing time filled with food, beach trips, fabulous weather, gorgeous landscapes, lazy days by the pool, games, and good company. I was able to cook dinner every night for the family, along with some lunches and breakfasts too. It was so much fun..enjoy this recap of my photos from the trip!

First night’s dinner. Burgers with sauteéd mushrooms and onion, rosemary sea salt potato wedges, and salad.
Day #2 lunch. Mixed green salad with sprouts, strawberries, grilled chicken, and avocado.

My BBF’s grandma’s b-day dinner. Soy brown sugar red wine marinated flank steak, roasted asparagus, cauliflower mash, and mashed potatoes.
B-day cake! It was a spice cake with orange & spice cream cheese frosting.
The BEST croissants I’d ever had. From this little “Croissanterie” on the French side of the island. No words.
Pizza night was a huge hit! Made a bunch of thin crust pizzas, some in the oven, some on the grill. We had cheese, BBQ chicken with caramelized onions and chives, veggie pizza with mushrooms and peppers, this incredible shaved asparagus prosciutto parm arugula lemon pizza that Laura’s cousin made, and another BBQ chicken veggie version. This may have been my fav night.
Made my famous avocado egg toasts one morning.
Went out to dinner one night. Yummy cocktail and sushi!
A trip to the “Croissanterie”. I just had to have a croissant AND crepes. The most amazing banana nutella crepes. Best combination ever…I need to try to make these at home.
Spaghetti bolognese, salad, and garlic bread + the most gorgeous sunset.
One day we took a trip to a beach that was a little further away from our place and had lunch there. How pretty is this salad?! Mixed greens, quinoa, mango, shrimp, and smoked salmon they made into little rosettes. Almost too pretty to eat.
Then we got gelato. It’s all about balance, right?
Another great dinner. Pork tenderloin with an onion marmalade, salad, lemon parmesan risotto, and sauteéd zucchini.
Choc chip cookies!
Made fish tacos with mahi that was caught THE DAY BEFORE and delivered to our house by the fisherman that caught it. Amazing. I made a tequila lime marinade for it, a red cabbage slaw, and chipotle lime crema. We also had guac and margs because how can you have tacos without them?
This was the view from lunch on our last day before flying home. Probably the prettiest view I saw there.
My best friend Laura and I split lunch. Caesar shrimp salad, tuna tartare, arugula salad, and fries that are not pictured.
It was an amazing trip and I am so thankful I got to go and experience such a beautiful place and cook some awesome meals for the family. Wishing I was there now!

ALL of the food was amazing!!! Loved it all! Everyone couldn’t get over how easy cooking for 18 people (including some picky eaters) was for you and everyone REALLY missed you after you left! Thanks Molly, you truly are a wonderful chef!
