Salmon is hands down one of my favorite foods. My favorite way to prepare it is with Asian flavors. I usually make it with a ginger sesame glaze, or a miso glaze. This preparation is for sure one of my faves when I am looking for a change from the norm..and SO simple. Literally comes together in minutes. Serve it over quinoa or a salad. Perfect meal. And so healthy!
Serves 3-4
3-4 salmon filets, no thicker than 1”
2 T. sweet chili sauce
2 T. honey
1 T. mirin (can also sub rice wine vinegar)
1 T. soy sauce
zest and juice of 1 lime
1/2 tsp. pepper
pinch of salt
1 scallion, thinly sliced
1/4 c. chopped fresh cilantro
Preheat broiler to high, and position oven rack to second to highest position. Whisk together sweet chili sauce, honey, mirin, soy sauce, lime zest and juice, pepper, and salt. Set aside.
Season salmon with salt and pepper, and place on foil lined baking sheet. Place under broiler for 5 minutes, then remove from oven and brush liberally with sauce. (I poured pretty much all of it on my filets). Place back under broiler, and cook for an additional 2-4 minutes, depending on the thickness of your filets. (Mine took 3 minutes). Once salmon is cooked through, remove from oven and garnish with sliced scallions and cilantro. Serve over quinoa, rice, or a salad! Perfection.
