Chorizo Kale Sweet Potato Mini Skillet Hash

I’ve been allll about breakfast food lately. It’s just so good! During the week, I usually stick to healthy, quick breakfasts after my workouts because I don’t have a ton of time in the morning before work. I usually make smoothies, acai bowls, oatmeal, or avocado toast. During the weekend however, I love a good brunch or big breakfast. Pancakes, skillet hashes, egg dishes, breads, you name it..I love it all. This was a last minute brunch I put together in a little mini skillet and it turned out to be SO good. Make it this weekend.

You can totally switch up the flavors in this too. You could do regular sausage or Italian sausage instead of chorizo, or you could do regular potatoes instead of sweet potatoes. You could also do spinach or swiss chard instead of kale!

I am a huge sucker for chorizo though. So much flavor. It’s good in everything..and the combo of flavor with the sweet potatoes was to die for.

Serves 1-2

1 link chorizo, diced
handful of kale, chopped
1 small sweet potato, cut into 1/2” dice
1/4 c. diced yellow onion
1 clove garlic, chopped
1 T. olive oil
1/2 c. chicken stock
salt and pepper
pinch of red pepper flakes
2 large eggs

Heat olive oil in small skillet over medium/high heat. Add chorizo and cook for 7-8 minutes, until crispy and golden. Set aside to drain on paper towels. Reduce heat to medium. Add onion and garlic and sauté for 3-4 minutes. Add potatoes and season with salt and pepper and a pinch of red pepper flakes, or more if you like it spicy. Cook for 6-7 minutes until the potatoes begin to soften. Add 1/2 c. chicken stock, and increase heat to high. Simmer 5-6 minutes until liquid is absorbed.

Heat broiler to high. Once liquid is absorbed in the skillet, press potatoes into pan and let crisp up for 2-3 minutes. Add kale, and sauté for 1-2 minutes. Add chorizo back in, and press mixture into pan. Gently crack eggs into pan, or into a bowl first and gently slide into pan. (I find this method works best). Place under broiler for 4-5 minutes or until eggs are cooked to your liking. Can’t beat a runny egg in my opinion…..
