These may just be the BEST tacos I’ve ever made. And I’ve made a TON of tacos. I’m so happy with how these coconut shrimp turned out too. They’re incredibly crispy, flavorful, and healthy! They’re lightly pan fried in coconut oil, and take minutes to make! The sweet chili mango slaw is sooo delicious and pairs perfectly with the shrimp. Oh, and avocado mash to top it all off. You know I can’t make many things without adding avocado.

This is something I make nearly EVERY single week for meal prep. I love it SO much. I love getting in a bunch of veggies, greens, protein, good carbs, and healthy fats after my early morning workouts, and this provides just that. I used to sauté a bunch of vegetables and egg whites in the morning and make an egg/veggie scramble, but these days, I’m short on time in the mornings. This frittata completely solves that issue. I make it on Sundays, portion it out, and keep it in the fridge. I top it with avocado sometimes, or serve it with a piece of avocado or peanut butter toast if I need extra fuel. Which is often.

Mexican food will forever be in my top, well, if not my FAVORITE type of food. I hate saying favorite, because I have so many “favorites”..cue eye roll. I really just LOVE so many things. Orange Chipotle Grilled Chicken with Avocado Stone Fruit Salsa

In other words, the only way I want to eat chicken ever again. I CANNOT get over how good this is. I mean, what’s not to love? Juicy chicken marinated in freshly squeezed orange juice, honey, and chipotle in adobo sauce, then topped with an avocado salsa filled with peaches, pluots (my new favorite thing..a cross between a plum and an apricot!), red onion, lime juice, and flaky sea salt. Serious summer dream meal right here.
