This Lemon Cream Pie Smoothie is the ultimate refreshing, energizing smoothie recipe, that tastes just like your favorite lemony summer pie. It combines bright & citrusy flavor into a creamy smoothie with notes of vanilla, and even contains a dose of hidden veggies! It makes a perfect light breakfast, or invigorating afternoon pick-me-up!

If you’re a lemon lover like I am, this lemon smoothie will be your new go-to summer breakfast/snack/dessert. It comes from my friend Elaine’s brand new smoothie cookbook, Rock Your Blender, and it’s absolutely amazing. I know many of us don’t typically think of making lemon flavored smoothies, but Elaine has truly created the perfect, not-too-sweet, not-too-tart smoothie, that tastes like you’re drinking dessert. Plus, it’s packed with so many nutrients! Sign me up.

I will be the first to admit that I am awful at making delicious tasting smoothies at home.

For some reason, I can never get them right. I usually just throw a bunch of stuff in a blender, and hope for the best, but they never turn out like the smoothies you can get at a fancy juice bar, or from those smoothie subscription services.

I however, have been lucky enough to be the recipient of Elaine’s smoothies not only from making her recipes at home, but also from being the recipient of several smoothies she made for me in her very own kitchen! When I say she’s a smoothie genius, she is a smoothie genius. Every recipe in Rock Your Blender is so thoughtfully created, well-tested, and creative. They’re all incredibly delicious, nutritious, simple to make, and they use everyday ingredients. All of Elaine’s recipes are allergy-friendly, so they can be enjoyed by all, and they are very customizable depending on your dietary needs/preferences.

I am blown away by how incredible the smoothie recipes are in the book, and completely overwhelmed by how many I want to make immediately, and have been enjoying them for breakfast daily since I got my hands on it. If you’re someone who gets in a smoothie rut like I do, you will absolutely LOVE this book.

Let me tell you more about this lemon smoothie/sunshine in a glass.

It’s the perfect balance of lemony, creamy, and slightly vanilla-y. It’s refreshing, and unexpectedly decadent at the same time. You only need a handful of ingredients:

  • Medjool dates
  • Blanched, slivered almonds
  • Lemon zest
  • Lemon juice
  • Vanilla extract
  • Turmeric
  • Frozen riced cauliflower
  • Your milk of choice (I used unsweetened vanilla almond milk)
  • Ice cubes
  • Coconut whipped cream (optional, but highly recommended!)

I also like to boost my smoothie with hemp seeds for a little extra protein and healthy fats – you can also use chia seeds or ground flax, which Elaine recommends in the book as well.

I recommend using a high-powered blender for this recipe, to ensure you get the best, creamiest smoothie consistency.

This recipe made two generous sized smoothies – especially if you top them with coconut whipped cream!

Elaine also provides her recipe for coconut whipped cream in the book, which is super easy to make and 100% worth it to make this lemon smoothie extra dessert-like. Another thing I love about Rock Your Blender, is that Elaine shares a bunch of tips and tricks for making the best smoothies at home, as well as the health benefits of smoothie ingredients. It’s packed with 31 smoothie recipes, with tons of variety, so there’s really something for everyone!

As you can see, she is SO creative. These are the kind of smoothies you’ll never ever get sick of. Plus, they’re incredibly good for you, and this book completely takes the guesswork out of making delicious smoothies at home.

Lemon Cream Pie Smoothie

Ingredients

  • 4 pitted Medjool dates
  • 1/4 cup blanched and slivered almonds
  • zest of 1/2 a large lemon
  • 2 large juicy lemons (about 1/4 cup juice)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground turmeric
  • 1 cup frozen riced cauliflower
  • 1 cup unsweetened plant-based milk (I used unsweetened vanilla almond milk)
  • 1-2 cups ice cubes
  • lemon zest and/or coconut whipped cream for garnish, optional

Instructions

  1. In a high-speed blender, add all the ingredients except ice. Blend until smooth and creamy.

  2. Add 1 cup of ice and blend again until no ice chunks remain. Taste and add another cup of ice, and blend again if a frostier smoothie is desired. Taste again and adjust flavors and sweetness if needed.

  3. Pour into one or two glasses depending on if this is a meal replacement or a filling snack. Serve immediately. Ganish with fresh lemon zest and/or coconut whipped cream if desired. I also added a spring of fresh mint to make it extra fancy & fun!

Recipe Notes

*You can boost this smoothie with 1-2 tablespoons hemp seeds, chia seeds, and/or ground flaxseed for extra plant-based protein & healthy fats!
