I’m always looking for new ways to prepare salmon. It’s one of my favorite things to make for a healthy dinner during the week. In these winter months where it’s too freezing cold to grill, I don’t always feel like having the same ol’ broiled or pan fried salmon. Also, this warm tomato salsa is SO delicious and I want to put it on EVERYTHING.
This recipe was inspired by a meal my cousin made for me from one of Ina Garten’s cookbooks..salmon with melting tomatoes. I couldn’t get enough of it. You wouldn’t believe the flavor that comes from such simple ingredients.
The sweet cherry tomatoes cook down with shallot, plenty of garlic, and a little balsamic. Finish it off with basil, and that’s it.
The salmon is just really simply broiled with olive oil, oregano, and lemon zest. I find that that’s my go-to combo a lot of the time.
This meal comes together in literally less than 30 minutes. I can work with that..because this girl gets hangry. And no one wants that. Trust me, it’s not pretty. For that reason, at all times I have a quart sized bag filled with granola bars and various snacks in my purse. No lie.
This salmon would be delicious on a salad, served over pasta, with risotto, alongside roasted veggies…really whatever you want. It’s so versatile and pairs well with pretty much everything.
Including wine.
Salmon with Warm Shallot Tomato Basil Salsa
This delicious salmon is made in 30 minutes and it's topped with a warm shallot tomato basil salsa with tons of flavor! It's made with a little balsamic vinegar and fresh basil and makes a great, light dinner served with a salad or rice!
Ingredients
For the salsa
- 3 cups cherry tomatoes, halved
- 3/4 cup thinly sliced shallots
- 4 cloves garlic, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons balsamic vinegar
- 1/4 cup chopped fresh basil, plus extra for serving
- salt and pepper to taste
For the salmon
- 1-1 1/2 pounds salmon filet
- drizzle of olive oil
- 1 teaspoon dried oregano
- zest of half a lemon
- salt and pepper
Instructions
Heat a skillet to medium-high heat and add olive oil and butter. Add garlic and shallots and sauté for 2 minutes until softened and fragrant. Add the tomatoes, a pinch of salt and pepper, and cook for 8 minutes, stirring frequently, until tomatoes have broken down. Add the balsamic and cook for an additional two minutes. Once finished, stir in chopped basil.
To make the salmon, preheat broiler to high. Place salmon on a parchment lined baking sheet and drizzle with olive oil. Sprinkle with oregano, lemon zest, and a couple pinches of salt and pepper.
Broil for 6-8 minutes or until salmon is cooked through. This will vary depending on the thickness of your filet. Once finished, serve with the warm salsa and extra chopped basil!
