One-Bowl Flourless Dark Chocolate Peanut Butter Stuffed Cookies

These dark chocolate cookies are flourless and they’re stuffed with peanut butter! They’re only 8 ingredients and require just one bowl to make!

You’d seriously never guess these cookies were flourless. They’re SO fudgy and incredibly flavorful. And stuffed with peanut butter! I cannot tell you how much love I have for that combination. Chocolate and peanut butter for life.

I’m sure lots of you can agree. What is it about the combination of chocolate and peanut butter that’s just so mind blowing?

I froze little blobs of peanut butter for these cookies so that they can be easily stuffed! And to try not to make a huge mess. You just have to freeze them for about 15 minutes, and that’s it! While you’re measuring everything else out is plenty of time. They don’t have to be rock solid, just set enough so that you don’t make a mess everywhere when you’re stuffing them!

Stuffing them is super simple. You just roll the dough into balls, split them in half, stuff it with a frozen peanut butter blob, and put the halves back together!

If peanut butter isn’t your jam (who even are you), then you could sub any other nut butter, as long as it is more firm, and not the drippy natural kind. Heck, these would be incredible with nutella or even cookie butter!

These are pretty delicate when warm, so just be sure to let them cool for a bit on a cooling rack! I know it’s hard, but trust me on this one.

If you’re extra impatient, you could crumble a warm one over ice cream or whatever your heart desires!

Or dip them in a glass of milk! I forgot how good that was until I was photographing these. I haven’t done that since I was a kid and it was amazing. Some of the cookie crumbled off into the milk and made it chocolatey and it was soooo so good.

The other good thing is that these make a small batch (only a dozen!), so it’s like built in portion control, right?

One-Bowl Flourless Dark Chocolate Peanut Butter Cookies

These dark chocolate cookies are flourless and they're stuffed with peanut butter! They're only 8 ingredients and require just one bowl to make!

Ingredients

  • 1 cup + 1/4 cup creamy peanut butter (not the natural drippy kind. Jif or Skippy works best)
  • 2/3 cup light brown sugar, loosely packed
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1/3 cup unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips, plus extra for topping

Instructions

  1. Preheat oven to 350℉.

  2. Line a plate with wax paper and spoon 12 teaspoon sized blobs (1/4 cup total) of peanut butter on the plate. Freeze while you prepare the batter (should only take 15-20 minutes). (You will be using these to stuff the cookies with so they need to be hardened).

  3. In a medium mixing bowl, combine all ingredients except for chocolate chips. Mix until thoroughly combined. Add the chocolate chips and mix until incorporated. Roll cookies into 12 equal balls.

  4. Remove the peanut butter blobs from the freezer. Break the cookie balls in half and put a peanut butter blob inside each. Add the cookie halves back together and seal with your fingers to ensure that no peanut butter comes out. Press a few extra chocolate chips in the tops of the cookies, if desired. Place cookie dough balls on a baking sheet, spaced 2 inches apart. 

  5. Bake cookies for 12-14 minutes or until set. Let cool for at least 20 minutes. These cookies are very fragile when hot! Enjoy!

    Great recipe. Only one word of advice…. no matter how much you LOVE peanut butter don’t use more than the recommended teaspoon per cookie. The dough can only cover that much. Very tasty!
