Yes, it’s that time. For my seasonal loaded guac! This SUMMER GUAC is unreallll. It all started with this loaded autumn guacamole which I love oh so very much, and then continued with my loaded spring guac! And now this super summery and fruity version. I could eat guacamole allll day every day and be the happiest person EVER.
Fruit in guacamole might sound a little (or a lot) strange to you guys, but I promise it’s SO goooood. And I added grilled corn too because it’s one of my favorite things about summer! As I mentioned in Monday’s post.
The fruit mixed with the grilled corn and salty feta is the perfect trifecta of flavors! And instead of just lime, I used lemon juice too!
The only thing I left out that I always add to my guac is garlic. I LOVE garlic in my guac (and in everything for that matter) but here it’s unnecessary..and would probably taste a little weird with cherries and blueberries. Just sayin’.
Who else is obsessing over cherries?! I can’t get enough of them. I look forward to this time of year and eat them nonstop. They’re on the pricy side, but totally worth it because food is one of the only things I really spend money on. It’s such an important part of my life! Actually, let me rephrase that. It IS my life.
This would be a super unique dip to serve at your next summer get together and it would go completely perfectly alongside some margaritas.
I thought this combination of fruit was perfect, but feel free to add blackberries or raspberries or peaches! Have fun with it! I’m just a sucker for cherries, blueberries, and strawberries!
Me + ALL THE CHIPS + this guac + a margarita = all I ever wanna do this summer.
