Loaded Spring Guacamole
I’m totally committed to making a new loaded guac for every season. It all started with my autumn guac. And even before that, my bacon queso fresco guac from when I first started my blog. Both equally beautiful, delicious, and wonderfully different in their own ways. I don’t know many things that I love more than a huge vat, yes vat, of guacamole and salty chips. And a margarita on the side. Nothing quite beats that combo for me.

I brainstormed and brainstormed how I could make a “springy” guac. And then it came to me..peas! Also, any way to add more veggies to something, I am totally in. I love peas and I think they’re underrated. They’re sweet and delicious and taste good with pretty much anything. I pulsed them in the food processor to turn them into more of a mashed consistency, and then incorporated them into the guacamole. They add such a nice springy, sweet flavor to the guac without overpowering the beautiful thing that is avocado.

To make this even more delicious, I added bacon! A necessary ingredient in all of my loaded guacamoles, and I also added some lemon zest, garlic, red onion, and feta! Cilantro too of course. The feta adds that delicious, salty bite, and I’m a huge proponent of garlic in guac, and in everything for that matter, so that was a must. The lemon zest adds such a brightness with the rich bacon, avo, and feta.

So many good things going on here.

If you are entertaining this weekend, this would be PERFECT to make for a crowd. I’d also add that I would totally just make this for myself as a meal. Can chips and guac be a meal? I’m saying yes. Especially on the weekend.

And margaritas too, duh.

Cinco de Mayo is next week too, so I thought this would be the perfect mix of spring meets Cinco de Mayo. I also have a few Mexican inspired recipes coming next week in lieu of the holiday! Any excuse for more Mexican food. I can’t wait to share!

Loaded Spring Guacamole with Bacon, Peas, Feta, and Lemon

This loaded spring guacamole is filled with bacon, feta, peas, and lemon! Such a fun and delicious take on the classic guacamole!

Course Appetizer
Prep Time 20 minutes
Servings 4

Ingredients

  • 3/4 cup thawed frozen peas + 2 tablespoons for topping
  • 4 avocados, pitted
  • juice of ½ a lime
  • juice of ½ a lemon
  • zest of ¼ of a lemon + extra for topping
  • 1/4 cup diced red onion
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 cup crumbled feta cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped cilantro + extra for topping
  • lime wedges for serving
  • tortilla chips for serving

Instructions

  1. Place peas in a food processor and pulse until finely chopped. Add to a medium bowl and add the avocados, lime juice, lemon juice, lemon zest, red onion, garlic, and salt. Mash with a fork until desired consistency is reached. I like mine somewhere in between chunky and smooth!

  2. Add half of the feta, half of the bacon, and the cilantro. Stir until combined.

  3. Put guac into a serving bowl and top with the remaining feta and bacon. Top with the remaining 2 tablespoons of peas, a few grates of lemon zest, and extra cilantro if desired! I usually add a few lime wedges to the serving bowl as well if people want extra lime!

  4. Serve with your favorite tortilla chips!
