Zucchini Noodle Carbonara

Zucchini Noodle Carbonara
I don’t often make real deal carbonara. But when I do, it’s such a treat. But sometimes, you just wanna have a pasta dish that’s on the healthier side, but feels indulgent. This is for you my friends. And it’s SO easy!

Thai Veggie Chickpea Stuffed Sweet Potatoes

Thai Veggie Chickpea Stuffed Sweet Potatoes
I’m SO into everything sweet potato lately. And plant-based meals. I had been eating a lot of meat for awhile, mostly chicken and pork, but some beef too, and I realized how much I miss my beans and legumes! Such a great, cheaper way to get protein. And delicious of course. Pretty sure I’d eat anything if it was covered in peanut sauce. I mean, what is better?!

Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta

Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta
I NEED to add roasted veggies to my salads more often. This was SO delicious. First of all, any deeply roasted veggie is my best friend. And then added to a salad?! My new favorite thing. I’m one of those weirdos that loves salads and craves veggies more than anything. It’s true. The combo of flavors in here is insane. #nosadsalads.

Salmon with Warm Shallot Tomato Basil Salsa

Salmon with Warm Shallot Tomato Basil Salsa
I’m always looking for new ways to prepare salmon. It’s one of my favorite things to make for a healthy dinner during the week. In these winter months where it’s too freezing cold to grill, I don’t always feel like having the same ol’ broiled or pan fried salmon. Also, this warm tomato salsa is SO delicious and I want to put it on EVERYTHING.

Pesto Mushroom Sweet Potato Spinach Frittata

Pesto Mushroom Sweet Potato Spinach Frittata
This is something I make nearly EVERY single week for meal prep. I love it SO much. I love getting in a bunch of veggies, greens, protein, good carbs, and healthy fats after my early morning workouts, and this provides just that. I used to sauté a bunch of vegetables and egg whites in the morning and make an egg/veggie scramble, but these days, I’m short on time in the mornings. This frittata completely solves that issue. I make it on Sundays, portion it out, and keep it in the fridge. I top it with avocado sometimes, or serve it with a piece of avocado or peanut butter toast if I need extra fuel. Which is often.

Mexican Kale Salad with Chili Lime Cashew Dressing

Mexican Kale Salad with Chili Lime Cashew Dressing
Mexican food will forever be in my top, well, if not my FAVORITE type of food. I hate saying favorite, because I have so many “favorites”..cue eye roll. I really just LOVE so many things. I’m serious about the Mexican food though. I could eat tacos, taco salads, fajitas, enchiladas, chilaquiles, huevos rancheros, chips and guac, and margaritas for seriously every meal and never get sick of them. This meal is a healthy version of one of my favorite things..a taco salad!

Beet Noodle Bowls with Turmeric Roasted Chickpeas, Spinach, and Ginger Almond Butter Dressing
I don’t think I could pack any more nutrients into this bowl if I could. It’s full of so much GOODNESS. Beets, spinach, turmeric, ginger, almond butter…they all scream health. If you’re making new health-centered goals this year, this one’s for you.

Blood Orange Honey Glazed Salmon

Blood Orange Honey Glazed Salmon

Who’s in need of a healthy meal after this weekend? I know I definitely am! Soooo much good food and drink was consumed. I’m not mad about it at all. It was wonderful. I had such a great time with friends and family, but I’m definitely not feeling my best. These kind of easy, healthy recipes will save me this week.

My Go-to Chocolate Peanut Butter Energy Bites!

img_9773
These are my go-to energy bites that I make almost every Sunday to have ready for snacks, healthy desserts, or a pre-workout bite. I wanted to share them for meal prep Monday because I believe them to be SO helpful and important to have on hand if you’re trying to stick to a healthy lifestyle. Basically, they ensure I don’t find myself waist deep in a family size bag of chips at 3pm. I know you know what that’s like. And if you don’t, major credit goes to you.

Of course I HAD to make them chocolate + peanut butter flavored..because honestly what is better?!

Orange Chipotle Grilled Chicken with Avocado Stone Fruit Salsa

IMG_6211
In other words, the only way I want to eat chicken ever again. I CANNOT get over how good this is. I mean, what’s not to love? Juicy chicken marinated in freshly squeezed orange juice, honey, and chipotle in adobo sauce, then topped with an avocado salsa filled with peaches, pluots (my new favorite thing..a cross between a plum and an apricot!), red onion, lime juice, and flaky sea salt. Serious summer dream meal right here.
